Peppermint Ice Cream Recipe

This easy homemade peppermint ice cream recipe is topped with brownies and crushed candy canes and it is extremely creamy. You are going to want to try this, it will definitely keep you in the holiday spirit!

I promise this is going to be your new favorite ice cream. I use a Ninja Creami to make this recipe, and I cannot recommend it enough, it makes the creamiest ice cream ever! I could never get my food processor to make ice cream with this consistency, but if that is all you have don’t shy away from using it to make this. Ingredients:

Ice cream mixture
  • 1 scoop of chocolate protein powder, I use PEsceince or Clean Simple Eats
  • 1 tbsp sugar-free chocolate pudding powder
  • 1 tbsp whipped cream cheese
  • 300-380 mL unsweetened almond milk
  • â…› tsp peppermint extract or vanilla extract *optional (I recommend only using a small amount or the peppermint flavor will be overpowering)
Toppings:
  • 2 peppermint brownies
  • 2 tbsp American Dream Candy Cane Kisses Peanut Butter
  • Whipped cream *optional
  • Candy cane pieces *optional

Instructions:

  1. Make the ice cream mixture by combining all of the ingredients in a blender
  2. Divide into two Ninja Creami ice cream containers or any freezer-safe container and freeze for 24 hours or until the next day
  3. Place the ice cream mixture into the Ninja Creami and blend on the “Light Ice Cream” setting. Stir and scrape down the sides and “Respin” 4-5 more times until you get soft serve ice cream
  4. Scoop the ice cream mixture into an ice cream bowl or keep it right in the pint
  5. Top with 1 brownie, 1 tbsp peanut butter, whipped cream, and more candy cane pieces
  6. Enjoy your refreshing ice cream 🙂 

Should you add xanthan gum to your ice cream?
