Ingredients:

  • Vanilla protein powder, I used CleanSimpleEats
  • Mini chocolate chips
  • Pancake mix, I used Pamcakes Pancakes
  • Liquid egg whites
  • Baking soda
  • Salt
  • Vanilla extract
  • Melted light butter
  • Swerve brown sugar
  • Enlightened Ice Cream, I used ‘Brownies and Cookie Dough’

Instructions:

  1. Preheat your oven to 350 degrees
  2. Grease a small cast iron skillet, if you do not have one, use a small round baking dish
  3. Melt butter in the microwave for 5-10 seconds, it should be warm but not boiling
  4.  Combine the butter and egg and mix well
  5. Add in the baking soda, salt, and vanilla extract
  6. Once combined add the rest of the ingredients
  7. Pour into the cookie skillet and bake for 10 minutes, it may look underbaked but it is likely not
  8. Allow to cool for 1-2 minutes, top with a scoop of Enlightened ice cream

  • 1/2 tbsp mini chips
