Cheesy Zucchini Crisps and Ricotta Dip

The absolute perfect summer recipe is cheesy zucchini crisps with a creamy ricotta dip. This recipe is simple and so delicious. This recipe features my secret ingredient which is a total game changer!

Cheesy Zucchini Crisps and Ricotta Dip

Ingredients:

  • 2 medium zucchini sliced into coins
  • Whisps Italian Cheese Crumbs
  • 2 eggs
  • ¼ cup Part-skim ricotta cheese
  • Lemon
  • Salt and pepper 
  • Fresh basil, chopped

Instructions:

  1. Preheat your oven to 400 degrees
  2. Start by thinly slicing your zucchini into coins, lay on a paper towel-lined cookie sheet, and sprinkle with salt. Allow to sit for 10-20 minutes, this allows some of the moisture to escape the zucchini and helps make the chips crispy
  3. Crack the eggs in a large flat-bottomed bowl and whisk, and pour the cheese crumbs into a separate large bowl
  4. Remove the paper towel from the cookie sheet and spray with cooking spray
  5. Take each zucchini coin, dip it in the egg wash, and coat it with the cheese crumbs, lay flat on the cookie sheet, do not overlap
  6. Bake for 10 minutes
  7. While baking prepare the ricotta dip, place ¼ cup of ricotta cheese, squeeze with fresh lemon juice, and top with salt, pepper, and chopped basil
  8. Once the zucchini crisps are done baking top the dip with 8-10 zucchini crisps and get to dipping
  9. This serves 1, save the rest of the zucchini crisps for another serving (makes 6 servings total), or double/triple the ricotta dip for more servings

How to cook zucchini without it getting soggy?

There are a few things that help prevent the zucchini chips from getting soggy; make sure that you slice them thin enough, and upon slicing lay them flat, top with salt, and allow them to sit for 5-10 minutes, this will release moisture from the zucchini.

Can you freeze zucchini crisps?

You can freeze them but I would not recommend it, they will stick together upon freezing unless you lay them flat in a large container and top them with parchment paper.
