Lightened Up Zucchini Parmesan

A delicious, lighter version of zucchini parmesan. Don’t worry this recipe still offers the cheesy, sauciness of your favorite Italian dish!

Summer has come to an end but I still have some extra zucchini laying around. One of my all time favorite Italian dishes is eggplant parmesan, so I decided to put my zucchini to good use and create an alternative!

This recipe makes a single serving, so this is perfect for a dinner or lunch for 1! If you love the idea of this, but want some more, you can multiply the ingredients by the number of servings you desire. You may want to because it is that delicious!

Ingredients:
  • Zucchini (thinly sliced)
  • Egg whites
  • Whole wheat bread crumbs
  • Marinara sauce
  • Fat free mozzarella cheese
  • Chicken breast
  • Parmesan cheese

Instructions On How To Make The Lightened Up Zucchini Parmesan:
  1. Preheat your oven to 350 degrees
  2. Thinly slice your zucchini
  3. Lay the zucchini onto a paper towel, salt, and let sit for 20 minutes
  4. Add the breadcrumbs into one bowl, and the egg whites into one bowl
  5. Dip the zucchini slices into the egg whites, then the bread crumbs and lay out on a baking sheet
  6. Do this to all of the zucchini slices
  7. Bake for 20 minutes
  8. Use a 9×12 rectangle baking dish to begin the layers
  9. Add some of the sauce to the bottom, next layer the zucchini, top with chicken, and some of the shredded mozzarella cheese (NOT the parmesan), repeat this process until you are out of ingredients. **in the middle layer pour the remaining egg whites, if any, into the dish
  10. Cover the baking dish and bake covered for 15 minutes, remove the cover and bake for 5 final minutes
  11. Top with the parmesan cheese and enjoy!

This single serving lightened up zucchini parmesan is seriously so yummy you are going to love it! Layers of breaded zucchini, delicious marinara sauce, and oozing with cheese, you would never even know the sprinkle of chicken is included in the dish!
