Oreo Stuffed Cupcake Brownie

A brownie, cupcake, and Oreo all in one. This oreo stuffed cupcake brownie is perfection, a fun surprise for a celebration, or for just for fun! They are made from box mixes so they are easy to make too!

Now I know you are going to ask, are these macro-friendly? And the truth is, anything can be macro-friendly if you want it to be, all food fits. So are these high in protein? No. Are they low in sugar.. Eh no.. but are they delicious and fun to make? Yep!

I made these for Ryan because he was getting his wisdom teeth out and I wanted him to have something soft that he could enjoy, well we ended up enjoying them together and I do have to say they are amazing!

Ingredients you need for the Oreo Stuffed Cupcake Brownie:
  • 110th Birthday Chocolate Confetti Cake Oreos or Oreo Thins
  • Brownie Mix
  • Yellow Cake Mix
  • Vegetable or Canola Oil
  • Eggs
  • Sprinkles or Mini M&M’s for topping
  • Vanilla frosting

How do you make the Oreo stuffed cupcake brownies?
  1. Line 12 cupcake tins with cupcake liners and preheat oven to 350 degrees
  2. In a large bowl whisk half of the brownie mix (270 grams) with water, oil, and egg, mix well
  3. Divide batter into 12 cupcake tins, they should only be filled ¼ 
  4. Place an Oreo in each tin and push down so the brownie batter covers the Oreo
  5. Clean bowl and prepare yellow cake mix, ½ of the mix, egg, oil, and water
  6. Pour the cake batter evenly in the 12 tins over top of the brownie and Oreo
  7. Bake for 20 minutes
  8. Allow to completely cool and frost with vanilla store-bought frosting
  9. Sprinkle with mini chips, M&M’s or sprinkles

It is hard to define healthy, but I truly believe everything is healthy in moderation, so in short, yes cupcakes are healthy. What is not healthy is completely eliminating them from your diet even though you truly love them.

How do you get the oreo in the center of a cupcake?

In order to get the Oreo in the center of the cupcake, it is important that you place the oreo into the cupcake tin immediately after adding the brownie mix and making sure it is submerged before topping with the cake batter.

Should cupcakes be refrigerated overnight?

If you are using store-bought frosting they do not need to be refrigerated. If you decide to use homemade cream cheese frosting then you should refrigerate them. 

How do you create the brownie and cupcake layer?

The fun part of these cupcakes that normal cupcakes do not have is the brownie layer, make sure that you mix the brownie and yellow cake mix separately and add them into the cupcake tins at separate times.

How long do cupcakes take to cool completely?

It is important that you allow the cupcakes to cool completely before frosting them, it should take about 30-40 minutes.

How long can you store the cupcakes before they go bad?

The cupcakes will last a week if you store them in an air-tight container.

Brownie Layer

  • 1/2 Brownie Mix (270 grams)
  • 1 egg
  • 1/3 cup vegetable oil
  • 1/2 cup water

Cupcake Layer

  • 1/2 Yellow Cake Mix
  • 1 egg white (46 grams)
  • 1 egg
  • 1/4 cup oil
  • 1/2 cup water

Fillings and Toppings

  • 12 110th Birthday Chocolate Confetti Cake Oreos or Oreo Thins
  • Sprinkles or Mini M&M’s for topping
  • Pillsbury Vanilla frosting (about 3/4 of a container)
