Fudgy Flourless Halloween Brownies

The fudgiest, flourless, brownies you could ever dream of! When I baked these I could not believe how fudgy they were for only 98 calories a piece!

There is another benefit to these brownies, there is no flour, so if you are gluten free these are going to become a dessert staple!

So you may ask, how can you make brownies without flour? You use nut butter! As we all know, my favorite nut butter is Nerdy Nuts, so of course I used that. I used Dirt Cup, which is a chocolate peanut butter to begin with so it was a great brownie ingredient. But with that being said you do not need to use chocolate peanut butter… I would use Nerdy Nuts because it’s amazing.. But seriously any peanut butter would work, or almond butter! 

Let’s get into the ingredients for the fudgy flourless halloween brownies:

Whole Eggs: whole eggs are necessary for this recipe, it will make a difference! You can try with just liquid egg whites but I think they will cook flat!

Light Butter: I used Brummel and Brown light butter, I really like this spread because it is made with greek yogurt and vegetable oil! And it tastes the best in my opinion.

Peanut Butter: As I noted above, I used Nerdy Nuts Dirt Cup, which is a chocolate peanut butter. If you have not tried Nerdy Nuts you need to, but if you do not have it on hand, then using regular peanut butter, or almond butter. 

Coconut Sugar: I love baking with coconut sugar, it is equivalent to table sugar in terms of measurements, and it has a brown caramel flavor to it which makes every recipe better! If you do not have this I would try and use brown sugar, or Swerve brown sugar.

Unsweetened Cocoa Powder: Hershey’s will work but I used a little higher quality brand that was also organic. Not being snooty but these things make a difference especially with brownies!

Sugar Free Maple Syrup: I like the Maple Grove Farm brand, I find it does not have much of an aftertaste! If you do not have this you can use honey or pure maple syrup.

Baking Soda and Salt: You will need both of these ingredients for the fudgy brownies!

Festive Sprinkles: I made these in October around Halloween, so I used cute halloween sprinkles, decorate these for whatever occasion you would like.

These brownies are super easy to make, I cut them up smaller into 16 squares, if you wanted a larger brownie you could cut them into 12, either way, I know you are going to love these.

For ease of making these brownies, I highly recommend that you use an electric mixer, the peanut butter is difficult to handle with just a hand mixer. 

I used a KitchenAid mixer, but you can also use an electric hand mixer, as I said this will make the baking process way more feasible… trust me!

These brownies are thick in terms of the batter, they do take some time to bake but you do not want to over bake them! I baked mine for 25 minutes and constantly checked on them by inserting a toothpick and taking them out of the oven when the tooth pick was mostly clean. Keep in mind they are fudgy, and they will bake more as they cool.

Why are my brownies still gooey?

These brownies are gooey, and as I noted above and will take longer to cook in the center, check them with a toothpick to make sure they do not over-bake. They should no longer be runny in the center.

I’m not a huge advocate for keto recipes, but I guess they are low in carbs and moderate in terms of fat. They are also low calorie at only 98 calories per brownie.

Fudgy Flourless Halloween Brownies

The best, fudgy, flourless brownies that are low calorie and healthy! You need to make these.

Ingredients

  • 2 whole eggs
  • 1 tbsp Brummel and Brown butter or light butter (14 grams)
  • ¾ cup peanut butter (I used Nerdy Nuts Dirt Cup which is a chocolate peanut butter) 180 grams
  • ½ cup coconut sugar (If you do not have coconut sugar sub brown sugar)
  • ¼ cup unsweetened cocoa powder
  • 4 tbsp sugar free maple syrup
  • ½ tsp baking soda
  • ⅛ tsp salt

Instructions

    1. Preheat your oven to 350 degrees.
    2. Line a 9x9 pan with parchment paper and spray with baking spray.
    3. In a large electric mixer begin by whisking your eggs together. Add in the peanut butter, maple syrup, softened butter, and sugar. Combine well.
    4. Now you can add in the dry ingredients, the cocoa powder, baking soda, and salt.
    5. Using a rubber spatula to scrape the batter into the baking dish. 
    6. Bake for 20-25 minutes, or until the toothpick comes out clean (ish) You do not want to over-bake these!
