Key Lime Cake

A unique and tangy cake made with 4 ingredients, simple, moist, and delicious. With hints of lime and sweet cream cheese frosting, this key lime cake is the perfect summer treat.

This past week was my dad’s 60th birthday! His favorite dessert is anything key lime so I wanted to come up with something fun and limey! Naturally, I had to come up with my own, unique recipe.

If you have made any of my other recipes, you know I try my best to aim for simplicity, lower-calorie, but still delicious!! And, to no surprise, this recipe only requires 4 ingredients!

Ingredients For The Key Lime Cake:
  • 1 Box Yellow Cake Mix
  • 1 container cream cheese frosting
  • Sugar free lime jello mix
  • Key lime sparkling water (I got this from Walmart, it is sugar free sparkling water, not seltzer, Sprite Zero would also work)
  • Fresh lime zest (optional)

This was the first time I made a soda cake and I was pleasantly surprised with how it came out! I am still in shock with how moist the cake was just from 12 ounces of sparkling water! So yes, you are correct, you do not need eggs, butter, oil, just soda or sparkling water! To be quite honest I did not realize any difference in texture of the cake and I may make my cakes like this all the time!! (stay tuned there is probably more to come)

I wanted to make this into a layer cake so I used two 9 inch rounds. After combining the sparkling water, jello power, and cake mix, I divided it into the cake rounds. If you would like to make a sheet cake you can use a rectangle baking dish just take a look at the back of the cake package to see the correct baking time.

Here’s How To Make This Delicious Key Lime Cake:
  1. Preheat your oven to 350 degrees
  2. Grease two 9 inch rounds and line the bottom of each pan with parchment paper
  3. With a large mixing bowl or a KitchenAid mixer combine the cake mix, half of the jello mix, and 12 ounces of the sparkling water. (I got the key lime sparkling water from Walmart)
  4. Once the batter is combined, divide into the two pans and bake for 20-22 minutes
  5. Once the cake is done baking, take it out and let it cool for at least 1 hour
  6. The lining of the pan with parchment paper will make it easy to remove these from the pan with no casualties or cake breaks!
  7. Once the cake is cooled, place the first layer onto a cake plate.
  8. Use about 1/2 of the frosting to top the bottom layer and top with some fresh lime zest (optional but recommended)

9. Carefully place the second cake layer on top, make sure that it is aligned and looks pretty!

10. Use remaining frosting to cover the cake

11. Top with more fresh lime zest!

12. Serve and enjoy 🙂
