These cake bars are made from cake mix so the ingredients needed are very minimal. Chances are very likely that you will have most of the ingredients right at home. So let’s get into exactly what you need?

Frosted Funfetti Cake Mix Bars

Ingredients for the frosted Funfetti cake mix bars:
    • Fitbake Yellow Cake Baking Mix: This mix is low carb, low calorie, and so moist and delicious! All you have to add to it are a few eggs and some plain greek yogurt. If you are interested in purchasing some make sure you use my discount code Haley10
    • Fitbake Vanilla Buttercream Frosting: This tastes like the real deal, i love me some frosting but not always all of the sugar that comes with it. This frosting is only 90 calories per serving and less than one gram of sugar!
    • Whole Eggs: You will need three whole eggs for this recipe as per the instructions on the back of the cake mix.
    • Fat Free Plain Greek Yogurt: This is what is called for on the back of the cake mi box, I use Fage Plain Non-Fat Yogurt, but you are welcome to use any brand of your choosing. If you want to make this dairy free you can use almond milk and a bit of avocado oil!
    • Rainbow Sprinkles: What problem can’t be solved with some rainbow sprinkles. Funfetti is just more FUN… right? The addition of rainbow sprinkles in this mix is what gives it the rainbow look!
    • Vanilla Extract (optional): I added a splash into the cake mix for some more flavor, if you do not have this or you do not want to add it you do not have to!

Frosted Funfetti Cake Mix Bars

Instructions:
  1. Preheat your oven to 325 degrees F
  2. Grease and line a square 8×8 tin with parchment paper and baking spray
  3. In a large mixing bowl, combine the eggs and greek yogurt
  4. Once combined add in the cake mix, sprinkles, and stir
  5. Pour into the baking tin and bake for 25-28 minutes 
  6. Let the cake completely cool (around 30-40 minutes) then top with frosting and more sprinkles.
  7. Cut into 9 large slices and enjoy

Note – make sure you stir the frosting before topping the cake, you will want it to be soft and spreadable!

  • 1-2 tbsp water
  • 1/2 tsp Vanilla Extract (optional
