Mini Glazed Chocolate Chip Loaf Cakes

There is nothing better than an easy, and mini dessert am I, right? These mini chocolate chip loaf cakes are so easy, topped with a yummy glaze! High in protein, you need to make this pronto!

I know, you may be thinking, there are 19, nearly 20, grams of protein per serving, there is no way these can taste good. But, they are moist, filled with mini chocolate chips, and sweetened with a yummy glaze. The secret to making these taste so yummy is the limited amount of ingredients used. There is no protein powder or tons or artificial sweeteners, it is as simple as it can get! See the ingredient list below.

Ingredients needed for the mini chocolate chip loaf cake:
  • 1 whole egg
  • 1 ½ cup protein pancake mix, I used Pamcake’s (164 grams)
  • 1 tsp butter extract
  • 1 tsp baking powder
  • Pinch of salt 
  • 1 tbsp mini chocolate chips (15 grams)
  • 1 cup of Vanilla FairLife Nutrition Plan Shake (240 mL)
Glaze:
  • 3 tbsp Swerve confectioners sugar
  • 1 tbsp water

How to make the mini chocolate chip loaf cake:
  1. Begin by greasing two mini loaf tins, and preheating your oven to 350 degrees.
  2. Combine the egg, extract, pancake mix, baking powder, and salt. Mix well
  3. Add in half of the mini chocolate chips, and divide into the two mini loaf tins
  4. Top both loaves with the remaining chocolate chips and bake for 15-20 minutes, or until the toothpick comes out clean
  5. While they bake, prepare the glaze by mixing the confectioners’ sugar and water together.
  6. Allow the loaves to cool for 5 minutes, then pour the glaze over the loaves allowing it to settle and cool
  7. Slice and enjoy, ½ of a loaf is one serving!
How do you adjust baking time for mini loaf pans?

Similarly to adjusting cupcake baking to a cake, you are going to have to decrease the time baked, I typically divide it in half. If this were one large loaf of chocolate chip loaf cake, I would likely bake it for 45-50 minutes. For the mini chocolate chip loaf cakes, you bake them for around 15-20 minutes, both at the same time.

Can I substitute regular chocolate chips for mini?

If you do not have mini chocolate chips you can use regular chocolate chips but you are not going to get many for the serving. 15 grams of larger chocolate chips in comparison to 15 grams of mini chocolate chips is a big difference, so if you end up adding more but be sure to account for this within the nutrition!

Are mini loaf pans worth it?

Mini loaf pans are great, for various reasons. To start, they are perfect for making these mini chocolate chip loaf cakes, especially because an entire half of a loaf is one serving! Additionally, they are adorable, and make great gifts! Lastly, they are inexpensive, especially if you get the disposable ones, which I reuse anyway.

How big are mini loaf pans?

For this recipe I used the disposable mini loaf pans, the dimensions of these pans are 

5 3/4 by 3 1/2 by 2 inches. There are perfect for baking all sorts of things and you get around 5 in a pack!

How much protein is in each serving of chocolate chip loaf cake?

The macros are great for each of the mini cakes, the serving size is one half of the loaf, but if you were feeling hungry you could eat the whole loaf, they are mini after all. Each serving has 19.3 grams of protein, but these don’t taste like a protein dessert, you would never know it even had any added!

Can you make these mini chocolate chip loaf cake ahead of time?

These mini loaves make a great prep for some sweets throughout the week, I would recommend baking them ahead of time. If you wanted them to be extra fresh you could even wait to glaze them right before you enjoy them!

What can you use if you do not have the FairLife shakes?

If you cannot find the FairLife nutrition plan shakes you could sub for Silk high protein milk, or a Flax protein milk. I recommend trying to get vanilla, but a plain flavor would work as well you may just want to add a little bit of sweetener! Also, please note the nutrition information may change, each FairLife shake has 30 grams of protein, this recipe uses 2/3 of a shake.

Each serving is 1/2 of the entire mini loaf, I am perfectly satisfied with a few slices, so these mini loaves are not all THAT mini, trust me, one half is a lot!
