So now you know they are low in sugar and low-calorie, but what matters most is that they taste good right? These cookies are soft and fluffy with a melty, chocolatey peanut butter center, I don’t think they could possibly be bad!

How do you make the chocolate peanut butter stuffed cookies?
  1. Start by preheating your oven to 350 degrees and line a cookie sheet with parchment paper.
  2. Prepare the batter by combining the wet ingredients, and the dry ingredients in a separate bowl.
  3. Gradually add the dry ingredients into the wet ingredients.
  4. Using a cookie scoop, scoop some batter onto the cookie sheet, top with one peanut butter bite, and top with more cookie batter making sure it fully covers the chocolate. Repeat for all 10 cookies.
  5. Bake for 10-12 minutes.
  6. Allow to cool and enjoy!

How do you know when your peanut butter cookies are done?

These cookies are a little different than your average cookie because it is more of a cookie batter than a dough, and they are stuffed with a large piece of chocolate! You will be able to tell by looking at the exterior of the cookie, if it looks raw still then it probably is 😉

Can you stuff the chocolate peanut butter cookies with anything else?

What can I use if I do not have coconut sugar?

This recipe is refined sugar-free, so if you want to stick to that I would recommend using coconut sugar, or a zero-calorie sweetener like Swerve, but if you do not really care use regular granular sugar.

Why does this recipe use powdered peanut butter?

With the use of sugar, and pumpkin you do not need real peanut butter. It also keeps the calories lower so it’s a win-win! I highly recommend purchasing some powdered peanut butter, it also adds some protein to the recipe as well.

Ingredients

Wet

  • ½ cup pumpkin puree
  • ⅓ cup coconut sugar
  • 1 tsp vanilla
  • 2 tbsp sugar-free syrup

Dry

  • ¼ cup powdered peanut butter
  • 1 ¼ cup flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt

Chocolate

  • 10 Jojos Peanut Butter Delight Bites
  • Mini Chocolate Chips for topping (optional)
