Carrot Cake Sandwich Cookies

Carrot cake sandwich cookies feature all of your favorite flavors of a classic carrot cake into delightful handheld sandwich cookies! There is absolutely nothing better.

Do you have an abundant amount of carrots laying around? This is the perfect recipe for you! Soft, cinnamon spiced, carrot sweetened, oatmeal cookies, sandwiched with sweet vanilla frosting. It is all types of perfection.

Initially, when I knew I had extra carrots to use, I instantly thought to make carrot cake! But then I decided on these soft sandwich cookies to create a more unique spin with the same delicious flavors. You can buy the pre-shredded carrots, or you can use a food processor like me to finely chop them.

Here Is What You Need For The Carrot Cake Sandwich Cookies

Once you have all of the ingredients the rest is quick and easy!

Here Is How You Make The Carrot Cake Sandwich Cookies:
  1. Using a KitchenAid mixer or hand whisk, combine the egg and the butter
  2. Now add in the remaining wet ingredients: brown sugar, vanilla extract, carrots, baking soda, baking powder, and salt
  3. In a separate bowl combine the dry ingredients: oat flour, nutmeg, cinnamon, and old fashioned oats.
  4. Add the dry ingredients into the wet ingredients and combine
  5. Chill the cookie dough in the refrigerator for 30-60 minutes
  6. Preheat your oven to 350 degrees.
  7. Once the cookie dough is chilled, scoop the cookies into balls on a cookie sheet and slightly flatten them
  8. Bake the cookies for 8-10 minutes!
  9. This recipe makes 12-15 cookies!
  10. Once the cookies are cool, take two cookies, spread 10-12 grams of frosting on the bottom of one cookie and top it with the other to create a cute sandwich! Do this with the remaining cookies!

  • 60 grams Shredded or food processed carrots
  • 60 grams Oat flour
  • 42 grams Light Butter

  • 10 grams Pillsbury Creamy Supreme Vanilla Frosting
