If you have a special occasion on the horizon, this is a fun recipe to make and add extra pizzazz to match any event, or holiday. I made this recipe in the spring, so they easily became an ‘Easter dessert,’ but don’t limit yourself! It is a perfect treat to get creative with. Popcorn balls are quite similar and are a popular Halloween treat. Recycling this recipe in the fall and adding black and orange decor would be a great idea. 

You don’t even need to have a sweet tooth to love this gooey sweet treat.

Instructions:

  1. Begin by lining an 8×8 square baking dish with parchment paper or waxed paper
  2. Add the marshmallows and unsalted butter into a large mixing bowl
  3. Microwave for 4, 15-second intervals, mixing in between. It should be soupy and fully melted 
  4. Add the popcorn to the melted marshmallow mixture and combine with a rubber spatula
  5. Stir in M&m’s
  6. Press the popcorn mixture into the baking dish until it is evenly distributed, and top with sprinkles
  7. Allow to set for at least 30 minutes, you can also place it in the refrigerator to quicken the process
  8. Slice into 9 bars and enjoy

Does the marshmallow make a mess?

You would think that melting the marshmallow and butter creates a sticky mess, but you would be surprised to hear that this recipe is an easy clean up. You should definitely line the baking dish with wax paper or parchment paper. This makes it easy to remove the popcorn bars and leads to ultimately no clean up of the dish. When cleaning the mixing bowl, run it under hot water and let it soak for a few minutes; it will come right off with a sponge.

How do you store marshmallow popcorn treats?

Wrap the bars in plastic wrap and place them in an airtight container. They will stay fine at room temperature or in the fridge for 5-7 days.

Because this is such a festive treat, naturally, we want to make it as many colors as possible. The Easter marshmallow treats are pink, but simply add some food coloring and make them green for St.Pattys Day, or red for Christmas!

What if you do not have sugar cookie popcorn?

You can check out the Lesser Evil website if you are unable to find the Sugar Cookie Popcorn. You can also go to your local grocery store and grab some kettle corn or plain microwave popcorn to use instead.

Can you add a chocolate drizzle on top of the popcorn mixture?

This recipe would be even better with a bit of chocolate drizzled on top. Use candy melts of any flavor to add a fun drizzle to the top of the popcorn treats.

  • 3, 0.6 oz bags of Lesser Evil Sugar Cookie Popcorn (about 3-4 cups of popcorn)
  • 2 tbsp unsalted light butter (28 grams)
  • ¼ cup Easter M&ms (40 grams)
  • Optional: Sprinkles for topping
