Cheeseburger Soup

Calling all picky eaters. This low carb cheeseburger soup is a family favorite, perfect for a cold winter day. It is packed with cheese, classic cheeseburger flavor, and a lot of protein. This recipe is a crowd-pleaser and will have your taste buds smiling.

I have made some delicious soup recipes in my day but I can confidently say this recipe will be a huge hit in your house. I will tell you this recipe is not lacking in the cheese department, there is plenty of cheese, but you would be surprised to discover that one serving of this hearty soup has 37 grams of protein.

Classic cheeseburger soup recipes use dairy products like whole milk and all-purpose flour to make the soup thick and creamy but I used ingredients that were a bit different to add more protein. In place of flour, I used PEscience Multi-Purpose Blend, and instead of heavy cream or milk, I used non-fat plain Greek yogurt. This protein blend acts as flour because it is unflavored and it works just the same with over 20 grams of serving per serving. I love using greek yogurt in place of heavy cream or even oils in recipes, it is a great sub and adds protein and a lot of creaminess.

Ingredients:

  • 3-4 Yukon gold potatoes, diced, 640 grams or 1.5 lbs
  • ½ onion, chopped
  • 2 cloves garlic
  • 6 cups chicken broth
  • 1 tsp parsley
  • 1 tsp basil
  • ¼ cup non-fat plain Greek yogurt, 113 grams
  • 1 cup fat-free cheddar cheese
  • 1 package of frozen mixed vegetables 
  • 1 scoop Pescience Multi-Purpose Blend
  • 1 package 99% lean ground turkey
  • 3 tbsp whipped butter
  • **optional: a few dashes of worcestershire sauce for additional flavor

Instructions:

  1. Brown the ground turkey in a skillet, over medium heat, remove and place in a small bowl
  2. Saute the onion, and garlic until soft. Add chicken broth, potatoes, and ground turkey, and simmer for 10-12 minutes
  3. While the soup simmers, in a small saucepan, melt the butter, and add the multi-purpose blend to make a roux
  4. Slowly add into the soup and stir well
  5. Add the cheese and stir until the cheese melts
  6. Lastly, add in the frozen vegetables and allow to simmer for a couple of minutes
  7. Divide into 6 heaping bowls and top with salt, black pepper, and toppings of choice.

How do you store the leftovers? 

I prepped this recipe for the entire week and had it for lunch each day. Store it in the refrigerator in an airtight container for up to a week!

What can you pair with cheeseburger soup?

I love enjoying this soup with a warmed baguette or buttery crackers. It is also delicious topped with crispy bacon, sliced green onions, or some sesame bun croutons and chopped dill pickles for an even bigger cheeseburger vibe.

What cheese goes well with this soup?

In my opinion, cheddar is the best option for this soup. I used fat-free cheddar to add more protein for fewer calories but you can also use Velveeta cheese which is lower in calories and melts great. Other cheeses you could try with this recipe are, American cheese, sharp cheddar

Can you add extra cheese?

If you want this recipe to be even creamier you can add extra cheese, or if you wanted to mix up the type of cheese add a combination of American cheese and cheddar cheese… yummy!

Can you replace the ground turkey?

Yes, you can, I prefer ground turkey to ground beef, but this recipe would taste just as yummy with tender ground beef, just note the nutrition information will be different and I would suggest using lean ground beef and draining any excess grease once cooked.

How do you make sure the potatoes are cooked enough?

One major disappointment with this recipe would be if the potatoes are not cooked enough! You want to make sure you have tender potatoes, so before adding the roux, stab the potatoes with a fork to make sure they are cooked to perfection.

What is cheeseburger soup made of?

Typically, a thick and comforting soup filled with cheddar cheese, chicken broth, tender beef or turkey, and dairy products of some kind to make it super creamy.
