Cheesy Taco Soup

Let’s taco about this cheesy taco soup recipe. This hearty soup is filled with cheese, ground turkey, beans, and more cheese. Best of all it is so easy to make!

Have you ever shown up to a party or gathering and made a beeline straight for the chips and dip? Yep that’s me. This is why you will see that I make so many recipes that encompass tacos/Mexican food vibes, cheese, and something to dip.

Tortilla chips are the best! They pair perfectly with many of my favorite things; taco dip, buffalo chicken dip, salsa, cheese aka nachos.

You can never go wrong with some cheesy dipping.. So this week’s menu featured this healthy taco soup recipe! If you have ever had (and loved) the taco dip with the Hormel chili, cream cheese, and cheddar cheese than you and I may have similar taste buds. My aunt always makes this dip and it is my favorite. In high school I would make mini servings every day after school. To do this, I would put a little cream cheese, some Hormel chili, and cheese in a small bowl and microwave it. Then, I would happily sit and dip my tortilla chips in this perfect little single serving..sometimes I would make a second.

Well, this particular dip is probably not the healthiest choice for lunch so I decided a cheesy taco soup recipe would suffice. I did buy tortilla chips, Tostitos are my favorite, to dip rather than making my own this week. Tostitos are a bit higher in calories than my homemade corn / tortilla chips but they were worth it this week! The bite size Tostitos are the most macro friendly so I always get them: 28 oz or 24 chips are 140 calories, 7 grams of fat, 18 grams of carbs, and 2 grams of protein. That is it! It took me about 15 minutes to put together this soup. It is SO easy. However, you will need a can opener.

Cheesy Taco Soup Instructions:

In a large pot, spray with cooking spray, and brown your ground turkey. When it is fully cooked add the chicken broth, cream of cheddar soup, spices, and 2 cans of Rotel. Drain the kidney beans and add those as well. You’re done!! Bring the pot to a simmer, reduce heat, and cook for 30 more minutes.

This cheesy taco soup recipe yields 5 servings. I split mine up to bring in for lunch during the week. You can do this or enjoy all in one night with the family:) 1 serving is 364 grams, 259 calories, 1.5 grams of fat, 24.4 carbs and 36.8 grams of protein!!! Yay for tons of protein 😀

I highly recommend you top this soup with melted cheddar cheese, I use Fat Free Cheddar, shredded lettuce or cabbage, tortilla chips or a warmed tortilla! This taco soup is perfect for reheating.

Ingredients

  • 1 can of Campbell's cream of cheddar soup
  • 1 package of 99% lean ground turkey mine was 580 grams
  • 1 can of light kidney beans
  • 2 cups of chicken broth
  • 2 cans of Rotel Diced Tomatoes and Green Chilies
  • 1 tbsp Cumin
  • 1/2 tbsp garlic powder
  • salt and pepper

Instructions

  1. Spray a large pot with cooking spray and cook your ground turkey.
  2. When the turkey is fully cooked add the chicken broth, cream of cheddar soup, spices, and 2 cans of Rotel.
  3. Drain the kidney beans and add those as well.
  4. Bring the pot to a simmer, reduce heat, and cook for 30 more minutes.
  5. Divide into 5 and serve or use for meal prep throughout the week.
  6. I topped my soup with Fat Free Cheddar, and had chips and shredded cabbage on the side for dipping and topping.
