I have been making this recipe for a few years now, it is a low calorie brownie recipe, and it is also high in protein. This recipe makes 12 fudgy brownies, and each brownie has 5 grams of protein.
I was on the hunt for pre-crushed peppermint sticks but I could not find any. I ended up just buying a pack of Candy Canes and crushed them up myself. This recipe uses two, so I unwrapped them, put them in a plastic bag and used the back of the spoon to crush them. Only after doing this did I find out that Wegmans sells them nicely packaged and crushed.. lol. So if you have a Wegmans go there now, if not, crush them by hand like me:)
I know the chocolate mint combo is controversial.. I have always loved it but I can see how the mint can be overpowering at times. Definitely not the case for these brownies! There is a perfect balance of chocolate and mint! I think I owe part of that to the Chocolate Mint Cookie Pescience Protein powder!
Peppermint brownie ingredients:
Dry ingredients:
- ½ cup flour, 60 grams
- ¼ cup cocoa powder, 24 grams
- 1 scoop PEsceince Chocolate Mint Cookie Protein, 31 grams
Wet ingredients:
- 6-7 tbsp liquid egg whites, 100 grams
- 2 large eggs
- ¼ cup light butter, 46 grams
- ¼ cup Swerve brown sugar, 40 grams
- 1/2 tsp vanilla extract
Instructions:
- Preheat your oven to 350
- Use cooking spray and parchment paper to line an 8×9 square pan
- Start by creaming your butter. Then add your eggs, egg whites, and sugars and vanilla extract
- Slowly sift in the dry ingredients
- Use a rubber spatula to scrape the brownie batter into the prepared pan
- Bake for 10 minutes
- While the brownies are baking, place the peppermint candy on a cutting board, and using the back of a spoon, crush the sticks into small pieces.
- Top the brownies with the crushed peppermint candies and bake for 10 more minutes
- Allow to cool for 10-15 minutes
- Slice the cooled brownies using a sharp knife into 12 squares, and enjoy
What if you do not have chocolate mint cookie protein?
If you do not have chocolate mint protein just use a plain chocolate protein powder and add a teensy bit of peppermint extract 1/4-1/2 tsp! Peppermint extract is very strong so make sure to use it sparingly or else your chocolate brownies will taste like toothpaste.
What if you do not have any peppermint candy?
If you are not able to find any peppermint candy you can top these brownies with semisweet chocolate or a peppermint buttercream frosting. To make this frosting you would combine peppermint extract, butter, and powdered sugar.
Do you have to add protein powder?
If you do not want to add protein powder to these brownies you do not have to, just make sure you add:
¼ cup of flour
¼ tsp peppermint extract
1 tbsp liquid sweetener
