When I was younger, my mom made the best homemade banana bread ever, the whole house was filled with wonderful smells! This great recipe takes it to a whole new level.

This delicious banana bread recipe is filled with hints of sweet birthday cake and sprinkles. The best part is that it can be made dairy-free and gluten-free to fit into any dietary restrictions. Since it is December, and we are only a few days away from Christmas, I took it upon myself to make this 5 ingredient banana bread recipe extra festive.

Wet ingredients:

  • 2-3 ripe overripe bananas
  • 2 tbsp melted coconut oil or butter
  • 1 tbsp maple syrup or agave syrup
  • 2 tbsp dairy-free milk

Dry ingredients:

  • 1 Package GoNanas Birthday Cake Mix

Instructions:

  1. Preheat the oven to 350 degrees
  2. In a large mixing bowl or large kitchen mixer, mash bananas (3) until there are no chunks left. If the bananas are extra ripe 2 will be fine, I tend to always add in an extra banana and use 3 for some natural sweetness.
  3. Add the melted butter or coconut oil, maple syrup, and dairy-free milk and mix well
  4. Add the birthday cake banana bread mix and mix the banana bread batter well
  5. Once combined, use a rubber spatula to pour batter into a greased, lined parchment paper, loaf tin
  6. Bake for 50-60 minutes, allow to cool on a wire rack for 5 minutes, then remove from the baking tin and allow to cool for 10 more minutes
  7. Optional: Top with melted frosting and festive sprinkles. Slice and enjoy

**note if you want to make banana bread muffins, use a muffin tin instead of a loaf tin, and adjust the baking time to 25-35 minutes

This recipe stays fresh and moist for around 5-6 days at room temperature wrapped in plastic wrap or in an airtight container. If you want to keep it for longer, you can wrap it up and store it in the freezer for up to 30 days.

Top mistakes people make when baking birthday cake banana bread;

  1. Overmixing the batter, as soon as the banana bread batter is all combined, stop the mixer!
  2. Not completely mashing the banana… no one wants chunks…
  3. Using unripened bananas, the riper a banana, the sweeter it is. If the banana is still green it is also going to be hard, making it more difficult to make moist banana bread.
  4. Using too many bananas, this recipe calls for 3 bananas or 2 super ripe bananas. If you use too many bananas it can make the banana mixture too wet leading to heavy and damp bread.

The reason for this is that we bake it in a loaf tin, making it bread. When we bake it in muffin tins, we refer to them as banana bread muffins. That makes sense, right?

Can you use melted coconut oil instead of butter?

The baking mix is vegan by nature, but I personally prefer to use melted butter over melted coconut oil because I am not intolerant to butter, and I find that coconut oil gives it a nutty flavor. If you are vegan, you can also use vegan butter!

What can you spread on banana bread?

With this recipe, I top it with melted store bought vanilla frosting, and Christmas sprinkles. But banana bread is also great with:

This mix is not refined sugar free because it contains brown sugar and white chocolate chips. However, it is vegan, gluten-free, and sweetened with natural sugars like maple syrup or agave. Regardless, this recipe is low sugar compared to others.

What if you do not have brown bananas in the house?

A little trick if you do not have any ripe bananas is poking a hole in the banana, and microwaving it in 30-second increments until it is brown and soft!
