It is finally fall!! Naturally, that means more squash to include in more delicious recipes. This is the absolute best butternut squash soup recipe and super easy to make!
I will not lie to you, I make this soup in the spring and summer too just because it is that good! There is something about butternut squash soup in the fall though that makes it extra special.
My Advice To You:
I highly recommend buying cubed butternut squash. If you belong to Costco they sell large bags of frozen, portioned, butternut squash. If you do not belong to Costco, you will likely be able to find cubed butternut squash in the produce section of your local grocery store. If you absolutely cannot find anything but a whole butternut squash I will explain the steps necessary to prepare the squash for the soup!
How To Peel And Cut A Butternut Squash:
- Poke holes in the squash with a fork and microwave it for 60-90 seconds so it is easy to slice.
- Slice off the ends of the squash.
- Peel the squash with a vegetable peeler.
- Slice the squash in half horizontally and scrape out the seeds.
- Now you can cut up the squash into cubes and it is ready to be used in the soup!
Now that the squash is ready, you are set to make the best butternut squash soup ever!
Ingredients:
- Salted butter
- Onion
- Potato
- Chicken broth
- Cubed butternut squash
- Paprika
- Salt and pepper
Here Is How To Make The Soup:
- Chop up the onion, peel, and cube the potato
- If you have to peel and cut your butternut squash do so now by following the instructions above
- When the vegetables are prepped, add butter to a large pot over low heat
- Now add your onion and cook until it is translucent
- Now add in the chicken broth, potato, butternut squash, and paprika
- Bring the pot to boil
- Cover and reduce heat and cook for 30 more minutes
- When the soup is done cooking, use an immersion blender to puree the soup until smooth (**if you do not have an immersion blender add the soup to a food processor to puree until smooth)
- Let it cool FIRST, then enjoy 🙂
