I know there is a long-lived debate that mint does not belong in the dessert world, but I strongly disagree. Mint chocolate chip ice cream is very different from toothpaste, ok? And if you are basing this opinion off of strictly not trying any mint desserts I encourage you to get over it and try these mint chip cookies.
If you have kids, this is the perfect Halloween activity, and if you do not have kids, this is a perfect Halloween party activity. It is quite fun to decorate the cookies and make each of their Frankenstein faces unique in their own way.
You may be surprised to discover that these cookies are made with melted ice cream. Yep, you heard it right, I replaced some of the butter in these cookies with Peppermint Partie Enlightened Ice Cream to make these the perfect Frankenstein mint chip cookies.
Ingredients:
- ¼ cup whipped butter (28 grams)
- â…” cup melted Enlightened Peppermint Partie ice cream
- ½ cup Swerve brown sugar
- 1 whole egg
- 1 tsp vanilla extract
- ½ tsp baking soda
- ¼ tsp salt
- 1 â…” cup flour
- 1 scoop vanilla protein
- Toppings: whipped cream cheese frosting, green food coloring, fun Halloween sprinkles, mini chocolate chips
Instructions:
- Preheat your oven to 350 degrees
- Using a large kitchen mixer whip the butter, eggs, vanilla extract, and sugar.
- Pour in the melted ice cream.
- Gradually add in the flour, baking soda, salt, and vanilla protein. Sprinkle in Halloween sprinkles if you want.
- Using a small cookie scoop, scoop 1-inch balls onto a cookie sheet and press down with your fingers.
- Bake for 8-9 minutes.
- While the cookies are baking combine whipped cream cheese frosting (I used Duncan Hines) with a few drops of food coloring.
- Allow cookies to fully cool, decorate with frosting, and sprinkled to resemble Frankenstein.
- Enjoy!
