Here is the little kicker, this toast is actually an english muffin. I truly love English muffins with all of my heart, if you do not feel the same way you are more than welcome to use regular toast.
I came up with this recipe more so on a limb, I had made some crock pot chicken for the week, I had avocados I wanted to use, and I also had english muffins that I was craving. So I put it all together and this little meal was born.
If you know what it’s like to have ripe avocados that you don’t want to go bad then this meal is going to be the perfect go-to meal for you. The essential ingredient for this recipe is everything but the bagel seasoning, it’s perfect for all kinds of toast, but especially avocado toast.
Buffalo Chicken Avocado Toast Ingredients:
- Mini Avocados: Trader Joe’s carries these and they are not only adorable but the perfect serving size. You can definitely use half of a regular sized avocado if you cannot find these
- Thomas English Muffin: These are my favorite, and they come in at 150 calories a piece. I also recently tried Whole Foods and Trader Joe’s English muffins and those are also delicious! Whichever you use, just make sure you track that English muffin if you track macros because a lot of them are different!
- Crock Pot Buffalo Chicken: If you know me you know that I am a huge crock pot chicken girl, it is so easy to make, and it just tastes so amazing! Click the link so you can make this easy recipe.
- Frank’s Hot Sauce: This is not necessary, but I drizzle a little bit more on top, if you don’t do well with spicy I would recommend not adding anymore.
- Everything But The Bagel Seasoning: As I noted above, this is an essential ingredient. Luckily for us, a lot of stores carry it nowadays. Trader Joe’s used to be the only store, but now I can find it at my local grocery store, as well as Wegmans.

- Scrambled Egg, Bacon Avocado Toast: I feel as though this recipe would work for both breakfast, and lunch, or even dinner. For this recipe you will just need to scramble eggs, fry some bacon, and load up your toast.
- Taco Avocado Toast: If you hate buffalo chicken, layer the english muffin with my taco beef, top with salsa, sour cream, and sliced avocado.
- Greek Avocado Toast: Make my honey cilantro chicken, top with tzatziki, cucumber, pickled onions, and feta cheese.
- Cottage Cheese and Avocado Toast: This is just as it sounds, spread low fat cottage cheese on to your toast, top with avocado, and drizzle with some hot honey

How to Make Buffalo Chicken Avocado Toast?
As I probably have said a million and one times in this blog it is super easy.
- Begin by slicing your english muffin and toasting it to your desired darkness. If you do not want to use an English muffin then just toast your bread with no slicing needed.
- Next, clean your avocado (spray the skin with veggie spray and rinse) and slice it in half. Scoop out half and slice it thinly.
- Warm up your buffalo chicken in the microwave, the time is going to vary but I usually do a minute to a minute and a half.
- When your English muffin is done toasting, top it with the warmed buffalo chicken, sliced avocado, and everything but the bagel seasoning. You can also drizzle more buffalo sauce on top if you want.
