Easy Meal Prep: Taco Beef and Buffalo Chicken

Meal prep is crucial for some people in reaching their goals! But, most people don’t want to spend hours doing this on their days off, so here is an easy meal prep of delicious taco beef and buffalo chicken!

When prepping both of these things, I can say it only took me about an hour for both and then I was set to get creative throughout the week! They were so easy I can include them both in this blog!

What do you need to make these?

Taco Beef:

  • 1 lb ground beef, I used Butcherbox
  • Salsa, I used salsa verde
  • Cumin, paprika, garlic powder, chili powder

Stove Top Buffalo Chicken

  • Chicken tenderloins (410 gram), I used Butcherbox
  • Whipped Cream Cheese
  • Ranch Seasoning
  • Franks Red Hot Sauce
How do you make them?

Taco Beef:

Start by spraying a warmed large pan with cooking spray, add your beef, break up into small crumbles and cook until fully browned and cooked! Add in spices and salsa, stir and THAT’s IT!

Stove Top Buffalo Chicken:

Start by spraying a warmed large cooking pan with cooking spray, add your chicken tenders, cook until fully cooked and browned on both sides. 

Remove the chicken, shred with a fork and then return to the cooking pan, add cream cheese, ranch seasoning, and hot sauce, and that is all!!

What can you make with the easy meal prep?

The options are endless!! Both meal preps are so versatile, but here are my favorites.

Easy Meal Prep, Taco Beef Creations:

  • Taco Bowls: Cooked rice, taco beef, salsa, sour cream, fat free cheese.
  • Beef Tostadas: Extra Thin Mission Corn Tortillas toasted, topped with taco beef, fat free cheese, lettuce, fat free sour cream.
  • Taco Salad: You can make a taco bowl with Cut Da Carb wrap and fill it with romaine, taco beef, fat free sour cream and cheese, and top it with fresh salsa!

Easy Meal Prep, Buffalo Chicken Creations:

  • Buffalo Chicken Mac and Cheese: Elbow pasta prepared, buff chicken, fat free cheddar
  • Buffalo Chicken Crunch Wrap: Cut Da Carb Wrap, buff chicken, fat free cheese, and some greek yogurt on the side to calm the spice!
  • Buffalo Chicken Flatbread: Top a Cut Da carb Wrap with buff chicken, fat free cheese, sour cream, and chopped green onions, melt the cheese in the oven.. YUMM
Can you reheat the taco beef and buffalo chicken?

Yes!! It is meal prep after all, right?? I stored mine in the refrigerator for a week and warmed them in the microwave, easy peasy.

Taco Beef

  • 1 lb ground beef I used Butcherbox (455 grams)
  • 120 grams Salsa I used salsa verde
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Chili Powder

Stove Top Buffalo Chicken

  • 1 pckg Chicken tenderloins 410 gram, I used Butcherbox
  • 70 gram Whipped Cream Cheese
  • 1 tbsp Ranch Seasoning
  • 2-4 tbsp Franks Red Hot Sauce
