Pumpkin Chip Baked Donuts

Pumpkin season is here and there’s no better way to celebrate than with these delicious Mini Pumpkin Chip Baked Donuts. Not only are they adorable, but they taste great and only require two ingredients!

I love pumpkin season. The moist texture pumpkin brings to baking and the delicious spices always come together to make something SO delicious, and that’s just what these Mini Pumpkin Chip Baked Donuts are, moist and delicious. 😉 And I love that I don’t have to hop on line at Starbucks or Dunkin’ to get my pumpkin donut fix. I can make them right at home and enjoy as many as I want!

These mini pumpkin baked donuts are awesome because they only require two ingredients: spice cake mix and pumpkin puree. I added mini chocolate chips as the third ingredient, but you can leave those out or replace them with something else if you prefer, like festive sprinkles. I’ve used similar ingredients to make pumpkin brownies, but donuts were calling my name this week. And I regret nothing. They are so good!

I also love how customizable this recipe is. You can get super creative and make a donut for all kinds of occasions. For a birthday party, use funfetti cake mix or even chocolate or vanilla cake mix. You can add food coloring for holidays like Christmas or Valentine’s  Day. You can also dip the donuts in a glaze or frosting for some more sweetness! Pumpkin is not the only option, but it is a delicious one. 

Did I mention that this recipe makes 35 donuts?! 😅 There will be plenty for everyone!

Tools You’ll Need

To make these mini donuts, you’ll need a mini donut pan. However, if you don’t have one of these, you can just pipe them onto a cookie sheet or pipe donut holes. They bake just fine that way, too. You’ll also want to grab a Ziploc bag, bowl, and spoon.

Ingredients for Pumpkin Chip Baked Donuts

Spice cake mix – You guys know that I am not above using boxed cake mix. It makes life so much easier and allows me to try so many more delicious recipes, like these donuts! Grab one box of your favorite spice cake mix for this recipe. If pumpkin isn’t your thing, you can easily grab a box of chocolate or vanilla cake mix instead. Use what you like!

Pumpkin puree – Note that this is not the same as pumpkin pie filling. Pumpkin puree is pure pumpkin with no seasonings whereas pumpkin pie filling has spices like cinnamon and nutmeg already added. We want plain pumpkin. You’ll want to grab a 15-ounce can. I was only able to find the 24 ounce can, so I just measured out 15 ounces and it worked perfectly.

Mini chocolate chips – Chocolate and pumpkin is such a delicious combination. I love using mini chocolate chips because you get a little bit of chocolate in each bite. We’ll use two tablespoons. Feel free to replace the chocolate chips with festive sprinkles. I think butterscotch chips would taste amazing, too. To make them mini sized, crush them in a food processor before you add them to the batter. You could even dip your donuts in frosting!

How to Make Mini Pumpkin Chip Baked Donuts

Making these mini baked donuts is SO easy and requires just a few simple steps. You’ll be enjoying your treats in no time!

  1. Preheat your oven to 350 degrees F.
  2. Spray your mini donut pans with cooking spray.
  3. In a large bowl, combine the spice cake mix, pumpkin, and mini chocolate chips. The mixture will be thick and sticky.
  4. Add the mix into a large plastic bag. Cut off the corner and pipe into the donut pan. Because this recipe makes 35 donuts, I piped more onto a cookie sheet to save time and not waste the extra batter.
  5. Bake for 7 to 8 minutes.
  6. Allow to cool and donuts from the pan.
  7. Enjoy!

Storing Your Donuts

Because these donuts are so moist, they begin to stick together over time. I recommend storing them in the refrigerator or moving them from the counter to the refrigerator after a few days.

Because this recipe makes so many donuts, you can also freeze them or give them away to your friends!
