Mini Monkey Breads

Ever had monkey bread? Let me refresh your memory, ooey gooey balls of dough coated in a cinnamon sugar syrup. This recipe yields mini monkey breads so you get one, two..or three, all to yourself!

Don’t get me wrong, your typical monkey bread in a bundt cake pan is great, but if you are in a pinch and need to make something, these are great. I brought the mini monkey breads to Thanksgiving this year for dessert and everyone seemed to love them.

I kind of eyeballed this-

  • 2-3 tbsp Swerve Confectioners Sugar 
  • 1 tbsp Dairy Free Milk or Water

This recipe is a little hack. Because it uses cinnamon rolls, they are super easy to make, and super delicious. All you have to do is cut up the cinnamon rolls into little squares! I used reduced fat cinnamon rolls, they’re only 10 calories fewer than the original ones so if you can’t find these it is not a big deal.

I am going to be 100 percent honest with you, I totally did not mean to grab these cinnamon rolls at the grocery store. I was mindlessly shopping, I thought I grabbed crescent rolls. When I got home, I went to put these in the fridge and realized they were cinnamon rolls. I could have just made cinnamon rolls but I wanted to make something a little more fun but still easy! So I opted to make these mini monkey breads.

In terms of ingredients; I used Swerve sugar for this recipe. This is a 0 calorie sweetener, but I promise it tastes great! If you want to swap this for normal brown sugar you can, but the nutrition for each monkey bread is going to change. I also prefer dairy free milk to dairy milk, but this is all preference, you do not need much for this recipe so either will be fine!

Here is how to make the mini monkey breads:
  1. Preheat the oven to 375
  2. Grease 8 cupcake tins
  3. Open up the tube of cinnamon rolls, (peel off the paper and bang on the tube lightly so it opens) separate the cinnamon rolls 
  4. Chop each cinnamon roll into 6 cubes, placing each cut up cinnamon roll into the cupcake tin (each monkey bread is one cinnamon roll chopped)
  5. Melt your butter in a bowl, add in the brown sugar, cinnamon, and splash of milk. Stir together
  6. Pour the cinnamon sugar mixture evenly over each monkey bread
  7. Bake for 10 minutes
  8. Combine the confectioners sugar, and milk to make the drizzle
  9. Remove from cupcake tins, drizzle, and enjoy (these are best served right out of the oven)

In my opinion these are best right out of the oven, but I did bring them over to my boyfriends for Thanksgiving. I wrapped them in foil and placed them in the oven for about 10 minutes just to warm them up right before we ate them. If you are reheating them, make sure you wrap them up like I did so they do not dry out.

    Your directions say “Chop each cinnamon roll into 6 cubes” but the picture of the biscuit with cut marks as well as the stacks in the muffin tins show nine pieces. Or am I seeing things wrong?
    Do the biscuits get cut into 6 or 9 pieces?

    1. As long as it’s divided evenly it’s fine! If you want them smaller you can do 9, if you want the cubes larger you can do 6!
