An all time favorite for under 120 calories! If you love Funfetti cupcakes you have to make this recipe. A healthy Funfetti cupcake topped with delicious vanilla frosting.
Is Funfetti cake your favorite like mine? Or at least your second favorite? How can it not be. Pillsbury Funfetti cake has been a classic for a long time running. I did not have this cake mix in my house and I wanted to make a lower calorie version!
If you can believe it the cupcake alone is only 40 calories! I opted to top it with the classic Vanilla Pillsbury frosting, you are free to choose chocolate instead.. Or even make your own lower-calorie frosting!
The perfect treat for quarantine when you find yourself wanting something sweet, and enjoyable to bake too:)
Here Is What You Need For The Healthy Funfetti Cupcakes:
- Gourmet Vanilla PEscience Protein
- Unsweetened Applesauce
- Baking Soda
- Baking Powder
- Cake Batter Extract (Vanilla will work too)
- SF Vanilla Pudding Powder Mix
- Oat Flour (ground oats work if you do not have oat flour)
- Fat Free Greek Yogurt
- Liquid Egg Whites
- Lakanto Monkfruit or Low Calories Sweetener
- Sprinkles (optional)
- Pillsbury Creamy Supreme Vanilla Frosting (optional)
**I did not have any oat flour in my house so I just placed oats in a food processor and ground them up to make the flower, it is the same thing!
After you gather all of the ingredients you get to make the cupcakes.
Here Is How You Make The Healthy Funfetti Cupcakes:
- Preheat your oven to 350 degrees
- Spray and line a cupcake tin
- Begin combining your dry ingredients in a bowl or a KitchenAid Mixer
- The dry ingredients include: vanilla protein powder, baking soda, baking powder, oat flour, sf pudding powder mix
- In a separate bowl combine the wet ingredients: applesauce, 0 calorie sweetener, liquid egg whites, fat free greek yogurt, cake batter extract, and cake batter (or vanilla) extract
- Add the wet ingredients into the dry ingredients
- Now sprinkle a small amount of sprinkles into the batter if you choose and fold in with a rubber spatula
- Divide the batter into the cupcake tins
- Bake for 15 minutes
- Take out and let cool
- Top with frosting and enjoy

Ingredients
Dry Ingredients
- 29 grams Gourmet Vanilla PEscience Protein
- 1/2 tsp Baking Soda
- 1 tsp Baking Powder
- 10 grams SF Vanilla Pudding Powder Mix
- 60 grams Oat Flour ground oats work if you do not have oat flour
Wet Ingredients
- 1/2 tsp Cake Batter Extract Vanilla will work too
