Rich, double chocolate, zucchini bread, with fresh zucchini from the garden! Making zucchini bread is my favorite way to use up all of this flourishing summer vegetable! When you have too many zucchini from the garden why not make some delicious zucchini bread.
Chocolate just makes everything better. Yes I do love my classic zucchini bread, but double chocolate anything makes my heart smile! This bread may as well be referred to as chocolate zucchini cake because that’s just how it tastes! Your kids will never know there is zucchini in here, shh I won’t tell them.
This recipe, although filled with chocolate, is notably healthier than your average double chocolate zucchini bread.
Here Is What You Need For The Double Chocolate Zucchini Bread:
- Unsweetened apple sauce
- Shredded zucchini
- Dark Chocolate chips (semi-sweet will work as well)
- Cinnamon
- All purpose flour
- Unsweetened cocoa powder
- Swerve granulated sugar
- Salt
- Baking Powder
- Baking Soda
- 1 Whole Egg
- Liquid Egg Whites
- Vanilla Extract
If you do not have applesauce you can swap in fat free greek yogurt, or fat free sour cream.
Here Is How You Make This Delicious Bread:
- Preheat your oven to 350 degrees
- Line a loaf tin with parchment paper and cooking spray
- In a large bowl, combine all of the dry ingredients (flour, cinnamon, cocoa powder, baking powder, salt, baking soda) and set aside
- In a large mixing bowl combine the wet ingredients (apple sauce, shredded zucchini, granulated sugar, whole egg, liquid egg whites, and vanilla extract)
- Gradually add the dry ingredients into the wet ingredients and combine
- Using a rubber spatula, pour the batter into the baking tin
- Top the loaf with the chocolate chips
- Bake for 45-55 minutes.
- Slice and enjoy
This recipe yields about 12 slices! Warm it up and top with almond butter for an extra special treat.

- 1 tsp Cinnamon
- 18 grams Unsweetened cocoa powder
- 150 grams All purpose flour
- 1/4 tsp Salt
- 1/4 tsp Baking Powder
- 1/2 tsp Baking Soda
Wet Ingredients
- 100 grams Unsweetened apple sauce
- 170 grams Shredded zucchini
- 20 grams Dark Chocolate chips semi-sweet will work as well
- 75 grams Swerve granulated sugar
- 1 Whole Egg
- 50 grams Liquid Egg Whites
- 1 1/2 tsp Vanilla Extract
Instructions
- Preheat your oven to 350 degrees
