Microwave Mashed Potatoes

These microwave mashed potatoes are literally the best mashed potatoes I have ever made, and the best part is you only need one dish and it only takes 15 minutes! What does that mean? More free time, and less dishwashing.

I must admit, the thanksgiving sides are more delicious than the main dish, but making them all takes so much time and so many dishes…I am obsessed with these microwave mashed potatoes and used the Large Anyday Microwave Dish to make them.

Potatoes are so great, mashed potatoes are even better. My favorite thanksgiving side dishes are mashed potatoes, stuffing, and sweet potato casserole! Let’s talk about how to make this recipe;

Ingredients:

  • 4 medium-sized yellow potatoes, 1.5-2lbs: Yellow potatoes are hands down my favorite to use for mashed potatoes. They have such a delicious flavor, but if you prefer a different kind of potato, feel free to use those.
  • ½ cup fat-free Greek yogurt: This adds so much creaminess to the mashed potatoes and a little protein! If you want to, sub in sour cream instead.
  • 3 tbsp whipped butter: Whipped butter is a game changer, this is not optional, and since it is so light and airy it mixes so well into the mashed potatoes. See vegan swaps below.
  • Salt, and pepper 
  • 2-4 tbsp chicken broth (optional): I love the flavor a little chicken broth adds to the mashed potatoes, you can use veggie broth if you want to make this dish vegetarian or omit it completely.  
  • Chopped scallions (optional): I top the mashed potatoes with a few chopped scallions, if you can find chives use these!

How to make:

  1. Chop the potatoes into large cubes, and place them into the large Anyday dish.
  2. Microwave for 12 minutes. The potatoes will be soft enough to easily mash by hand.
  3. Using a fork or whisk mash the potatoes.
  4. Add in the greek yogurt, whipped butter, salt, and pepper. I like to add in a splash or two of chicken broth but that is optional! Mix well.
  5. Top with chopped scallions and enjoy. This recipe makes 6 servings.

I promise you will never want to go back to boiling the potatoes, washing the pot, adding to the bowl, and then storing the leftovers in a separate dish. The Anyday dish is all in one, you can cook it right in the dish, mix in the ingredients, and place the lid on top to easily store the leftovers! It is a dream.

This recipe will stay well in the fridge for one week, and they reheat very well. I meal-prepped this recipe and warmed it in the microwave for 90 seconds, topping it with more salt and pepper!

Dietary swaps:

If you want to make this recipe vegan, you can omit the butter and yogurt and replace it with dairy-free butter and cashew sour cream.

You can omit the chicken broth, or use vegetable broth if you want this recipe to be vegetarian.
