Cheesy Hashbrown Casserole

This cheesy hashbrown casserole is comfort food in a bowl! Who does not love some cheesy potatoes. This dish is high in protein, low in carb, and a perfect meal for the whole family.

This recipe is super simple to make and as I said, perfect to share with the family, meal prep for yourself for the week, or you can even freeze it!

It is extremely cheesy and filling coming in at 40 grams of protein per serving! Your kids will not even know there is protein hidden under all of that cheese.

I viewed this recipe more as a lunch or dinner, however, being that it does have hashbrowns in it, you could also even serve this at breakfast, if you wanted, you could also substitute the ground chicken for ground chicken! Yum.

What do you need to make the cheesy hashbrown casserole?

Chopped Onion: if you do not like onion you can omit this but it gives it a great flavor!

Chicken Base or chicken broth: I prefer chicken base and water, but chicken broth would work just as well. To use the chicken base, add it into hot water and stir until it is fully

Fat Free Sour Cream: If you cannot find fat free sour cream, a light sour cream would also work.

Ground Chicken: You can sub ground turkey, if you do, I recommend using a lean ground turkey.

Plain Nonfat Greek Yogurt: Provides a similar flavor to the sour cream and adds in more protein! 

Fat Free Mozzarella Cheese: You can also use cheddar cheese, skim would work if you cannot find fat free, just note that the macros will be different per serving ! 

Shredded Hash browns: I purchased the simply potatoes brand so these were not frozen but frozen hash browns would also work, they would just require a bit of thawing prior to baking this

Garlic powder, salt, and black pepper: You are definitely going to want to add these for flavor!!

I opted not to, but this recipe would also be delicious with a little crunch on top like corn flakes or crunchy saltine or butter crackers! 

 

How do you make cheesy hashbrown casserole?
  1. Begin by preheating your oven to 350 degrees and greasing a 9×13 baking dish
  2. Saute the chopped onion. Once cooked, remove from the pan, cook the ground chicken until browned, remove from the pan and cool.
  3. In a large bowl combine the hashbrowns, sour cream, greek yogurt, ground chicken, onion, chicken base mixed with ½ cup of water, garlic powder, salt&pepper.
  4. Pour mixture into the baking dish, and bake for 30 minutes
  5. Top with the mozzarella cheese and bake for 20 more minutes
  6. Serve hot

Yes you can freeze the casserole to eat at a later date. It will freeze well for up to 1 month, but I recommend dividing it into smaller dishes prior to freezing it.

Can you substitute the ground chicken?

Yes, you sure can! The ground chicken provides more protein preserving and gives it a nice flavor. If you want to use a meat other than chicken I recommend using lean ground turkey. If you wanted to make this as more of a breakfast dish, substitute the ground chicken for ground turkey sausage, just note that the macros per serving will not be the same.

  • 1/2 Medium sized onion - chopped 172 grams
  • 8 grams Chicken Base or 1/2 cup chicken broth
  • 1/4 cup Fat Free Sour Cream 60 grams
  • 1 package Ground Chicken 454 grams
  • 2 cups Plain Nonfat Greek Yogurt 427 grams
  • 1 cup Fat Free Mozzarella Cheese 112 grams
  • 1 package Simply Potatoes Shredded Hash browns I used simply potatoes - 576 grams
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
