The absolute best NO bean chili! This healthy chili recipe is packed with veggies and ground turkey for those of you that love chili but hate beans!
A chili recipe with no beans? Are you in shock? There seems to be a debate whether chili is better off with beans or not. I personally love beans but I agree that chili is just as good without them! With a lot of vegetables and the right seasonings you can cook up an awesome bowl of chili…not to mention the BEST No Bean Chili.
I am a sucker for anything with chili, cheese, and some type of chips or tortilla. As you may know nachos are basically my WEAKNESS. When it comes to chili I have made many different types, this no bean recipe was just what I had in mind for this week! If you do like chili but cannot bare it without the beans take a look at my Crock-Pot Turkey Chili recipe or another classic, my Creamy Cauliflower Chili.
The base of this no bean chili is a bit thicker than your average chili. This is because of the addition of cauliflower rice. This is optional but I highly recommend it, you cannot taste it!
Here Is Everything You Will Need:
- One chopped yellow onion
- Riced Cauliflower (I used one frozen bag / 429 grams)
- 99% lean ground turkey
- 3 cups of Beef Stock
- 28oz can of crushed tomato
- 2 chopped zucchini (281 grams)
- 1 chopped bell pepper (180 grams)
- Cumin, garlic powder, salt, pepper, chili powder
How to Make the Best No Bean Chili:

- Saute a chopped onion in cooking spray until fully cooked. Add in a full bag of frozen riced cauliflower, 3 cups of beef stock or 3 cups of water + 3 servings of beef bouillon.
- Bring this to a simmer and then use an immersion blender to blend.
- Cover and reduce heat.
- In a separate pan cook the ground turkey.
- Chop your zucchini and bell pepper.
- When the turkey is fully cooked add the turkey, crushed tomato, pepper, and zucchini into the pot.
- Add all of your spices and bring to a simmer.
- Reduce heat and cook for 30 more minutes.
- Divide and serve into 5 or prep for the week.
- I added melted cheese on top and had a Mission Carb Balance Flour Wrap on the side / or my homemade chips, recipe below
How to Make Homemade Corn Chips:
What You Will Need:
- Mission Extra Thin Corn Tortillas or any type of tortilla
- Kitchen Shears
- Cooking Spray
- Salt
- Air Fryer: This is the one I own: GoWISEUSA
- Tin Foil
Instructions:
- Cut up your tortillas with the shears into any shape you want, squares or triangles usually work the best.
- Line your air fryer with foil and lay out the chips.
- Spray with cooking spray and sprinkle with salt.
- Set your air fryer to 370 degrees and let cook for 8-9 minutes or until brown and crispy.
- Dip and ENJOY!
- They are mini chips but they are super great! (If you want larger chips just use more tortillas and cut them larger)
Everyone in the office kept saying how good my chili smelled everyday! That means something. It really is the best no bean chili! Everyone was also shocked at how big of a bowl I had! One serving is 513 grams!! Yummy. Keep in mind that 513 grams is only 209 calories, 24 carbs, 1.8 fat, and 27 protein.
