Creamy Cauliflower Chili

Chili can be so versatile. There are so many different things you can add into it to make it high in protein and overall a yummy, healthy chili recipe, the creamy cauliflower chili is the perfect example.

It sounds weird, I know, but this recipe is amazing!

As a nacho lover I am automatically a chili lover..duh! This chili turns a classic turkey chili into a creamy, veggie filled, VOLUMINOUS healthy bowl of chili. Although it is February and we are seeing an early spring according to Puxatony Phil… I am still in the mood for warm foods I don’t know about you! You will be amazed how many vegetables you can add to a dish and still have it turn out AMAZING. Yes, I am looking at all of you people who fear veggies, they are our friends.. Promise…Veggie Tales forever.

I love creamy dishes, but if you do not, then take a look at my Spicy Turkey Stew, it is very similar to this recipe but no creaminess and no beans!

What I like to do with my chili is top it with some melty cheese, and make my own tortilla chips in the air fryer to dip.

Here Is How You Make The Chips:

Instructions:
  1. Cut up your tortillas with the shears into any shape you want, squares or triangles usually work the best.
  2. Line your air fryer with foil and lay out the chips.
  3. Spray with cooking spray and sprinkle with salt.
  4. Set your air fryer to 370 degrees and let cook for 8-9 minutes or until brown and crispy.
  5. Dip and ENJOY!
  6. They are mini chips but they are super great! (If you want larger chips just use more tortillas and cut them larger)
Healthy Creamy Cauliflower Chili Ingredients:
  • 1 bag of cauliflower rice
  • 1 small onion chopped (122 grams)
  • 1 zucchini chopped finely or food processed (243 grams)
  • 1 tsp of minced garlic 
  • 160 grams chopped grape tomatoes
  • 1 container of cottage cheese (mine was 332 grams)
  • 1 cup of chicken broth 
  • 1 package ground turkey
  • 1 can of diced green chilis 
  • 1 can of small white beans
  • spices to taste: chili powder, garlic powder, thyme, cumin 

This is a healthy chili recipe you will want to try!! Each serving is 357 grams, a heaping bowl, for only 210 calories, 20.1 grams of carbs, 2 grams of fat, and 29.5 grams of protein! I will explain how to make everything in the full recipe below!

Creamy Cauliflower Chili

The creamy cauliflower chili sounds like a weird idea but it is a delicious recipe, high in volume, and low in calories.

Cook Time 40 minutes 30 seconds
Total Time 1 hour 30 seconds

Ingredients

  • 1 bag of cauliflower rice
  • 122 grams 1 small onion chopped
  • 243 grams 1 zucchini chopped finely or food processed
  • 1 tsp minced garlic
  • 160 grams chopped grape tomatoes
  • 1 container 2% cottage cheese mine was 332 grams
  • 1 cup Chicken broth
  • 1 package Extra Lean ground turkey
  • 1 can diced green chiles
  • 1 can small white beans
  • spices to taste chili powder, garlic powder, thyme, cumin

Instructions

  1. Cook the turkey in the pan with salt and pepper and put aside.
  2. Use a large pot and spray with cooking oil and saute the garlic, tomatoes, and onion.
  3. In the meantime, use a food processor to rice your zucchini.
  4. Add the cauliflower rice, zucchini, cottage cheese and chicken broth and bring to a simmer.
  5. Add your spices and use an immersion blender to blend this all up.
  6. Now add in your ground turkey, green chili's, and white beans.
  7. Cook on low for 30-40 minutes
  8. Divide and serve or save for your weekly meal prep.
