virgin pina colada popsicles

When I was younger my mom would make us homemade popsicles all the time, she would use orange juice, and cranberry juice and they were so good! Yep, they were that simple, and my sister and I just loved them. When I saw these mini popsicle molds at Home Goods I knew I had to get them. Naturally, a pina colada is my favorite frozen drink so I decided to make it into a popsicle. This recipe makes a virgin pina colada, but if you wanted to get boozy with it you could replace the almond milk with some white rum!

If you do not have any popsicle molds you can run to Home Goods as I did, or you can buy some off of Amazon right here. Please note the molds I used were a little smaller than average so it made 8 popsicles, if your molds are larger the recipe may make less.

Low calorie popsicle ingredients:

  • 1 cup toasted coconut vanilla Light & Fit yogurt
  • 1 cup pineapple, cubed
  • ¼ cup almond milk which can be replaced with white rum if you want to make these boozy

Homemade popsicle instructions:

  1. Combine all ingredients in a food processor or small blender
  2. Divide evenly into 8 popsicle molds and allow to freeze overnight
  3. Once frozen, run under hot water for 1 minute to loosen the popsicle making them easy to remove
  4. Enjoy!

Why is it called virgin pina colada?

A virgin pina colada consists of cream of coconut and pineapple juice, there is no rum used in the non-alcoholic version of this drink.

Typically a pina colada is made with cream of coconut, white rum, and pineapple juice. This recipe is a little bit different and uses coconut greek yogurt, fresh pineapple, and almond milk.

How do you make popsicles that aren’t icy?

The more sugar in your recipe, the less icy it will be. The sugars from the fresh pineapple help a lot with this and therefore these popsicles are creamy and delicious!

How long does it take for popsicles to freeze?

I recommend allowing the virgin pina colada popsicles to freeze overnight, or for 24 hours!

How do you get popsicles out of the mold?

The best way to easily get the popsicles out of the mold is to run them under hot water for 30-60 seconds, they should be easy to remove after this.

Where can you find inexpensive popsicle molds?

I found the molds I used at Home Goods, but Amazon and Walmart have them as well for a great price!

How long ahead do you need to make homemade popsicles?

If you want to make them for a summer barbecue make sure you make them the day before, if you are running short on time, at least make them super early in the morning to make sure they are frozen by your afternoon barbecue!
