Virgin Pina Colada Popsicles

Popsicles are underrated, especially because you can come up with so many fun, and festive recipes. These virgin pina colada popsicles are low calorie, help you cool off, and you can even add some rum to them if you want! The perfect, summery, macro friendly popsicle.

When I was younger my mom would make us homemade popsicles all the time, she would use orange juice, and cranberry juice and they were so good! Yep, they were that simple, and my sister and I just loved them. When I saw these mini popsicle molds at Home Goods I knew I had to get them. Naturally, a pina colada is my favorite frozen drink so I decided to make it into a popsicle. This recipe makes a virgin pina colada, but if you wanted to get boozy with it you could replace the almond milk with some white rum!

If you do not have any popsicle molds you can run to Home Goods as I did, or you can buy some off of Amazon right here. Please note the molds I used were a little smaller than average so it made 8 popsicles, if your molds are larger the recipe may make less.

Low calorie popsicle ingredients:

  • 1 cup toasted coconut vanilla Light & Fit yogurt
  • 1 cup pineapple, cubed
  • ¼ cup almond milk which can be replaced with white rum if you want to make these boozy

Homemade popsicle instructions:

  1. Combine all ingredients in a food processor or small blender
  2. Divide evenly into 8 popsicle molds and allow to freeze overnight
  3. Once frozen, run under hot water for 1 minute to loosen the popsicle making them easy to remove
  4. Enjoy!

How long ahead do you need to make homemade popsicles?

If you want to make them for a summer barbecue make sure you make them the day before, if you are running short on time, at least make them super early in the morning to make sure they are frozen by your afternoon barbecue!

If you do not like coconut can you use something else?

If you do not like coconut, instead of using the toasted coconut Light & Fit yogurt just use the vanilla yogurt, I have done this before and it was still super delicious!

The popsicle flavors are endless! You could come up with so many different concoctions, as I stated above if you want to make the virgin pina colada popsicles not so virgin, replace the almond milk with rum! Here are some other ideas:
