My mom turns 60 this year and she said she did not want a birthday cake! However, I didn’t believe her for one second…and it turns out, she really did 😂 She admitted she just didn’t want to ask someone to make it for her because she knows we’re all so busy. But passing on a birthday cake for my mom? NO way!
That’s why I made this cute little Mini Birthday Cake. It helped me save some time while still doing something special for my mom. There’s also always SO much leftover birthday cake that usually goes to waste, so I wanted to make something I knew we could finish. And the Mini Birthday Cake was born!
Believe me, it was a huge hit, and I didn’t have to do anything fancy. I grabbed a boxed cake mix and some other ingredients from Walmart and turned them into this quick and affordable treat.
Make this Mini Birthday Cake next time you’re in a rush or you don’t have a large crowd to feed. Because a birthday cake made from scratch is always a touch more special. 🙂
Plus, it holds up well even if you do have leftovers. Cake for breakfast? Yes, please.
Ingredients You’ll Need
Boxed cake mix: For convenience, we’ll be using a boxed cake mix. It makes the process so much quicker and easier. Feel free to use whatever kind you like! We’ll use three cups.
Water or Milk: Some cake mixes call for water, others call for milk. Use 1/2 cup of whichever you prefer.
Eggs: These help provide structure to our batter and aid in the baking process. We’ll use two eggs.
Melted butter: I used three tablespoons of Brummel and Brown Spread. You can use whatever butter you have on hand.
Vanilla extract: Adds some moisture to the cake and helps bring all of the sweetness together. It’s something you’ll notice if it’s missing!
Frosting: I recommend using a whipped frosting to keep things a little lighter. I used 3/4 container of whipped cream cheese. You can totally use whatever frosting you like. Just note that the nutritional information will change.
Equipment for a Mini Birthday Cake
You likely already have baking equipment like bowls, measuring spoons, and measuring cups. What you might need to grab are two 6-inch round cake tins. You can find these at any grocery or craft store.
How to Make a Mini Birthday Cake
- Preheat your oven to 350 degrees F.
- Grease and line two 6-inch round cake tins with parchment paper.
- Next, combine all ingredients excluding the frosting in a bowl.
- Then, divide your batter into the cake tins and bake for 15-20 minutes.
- Remove and allow to fully cool.
- Remove cake from one of the tins to be the bottom layer and top with some frosting.
- Place the second cake on top and spread on desired amount of frosting. I wanted to make a naked cake, so I did not use a ton!
- Decorate and enjoy! 😊
Storing Your Mini Birthday Cake
Your mini birthday cake is best eaten within 5 days. Store it in a cake container at room temperature or in the refrigerator. If you don’t have a container, you can wrap it in plastic wrap.
Dietary Restrictions and Substitutions
This cake as written is not gluten or dairy free. It is also not vegan.
If you are dairy free or vegan, use two flax eggs and vegan frosting.
If you are gluten free, make sure to use a gluten free cake mix.
Decorating Ideas
You don’t have to be an expert cake decorator to make this Mini Birthday Cake look beautiful. Here are some tips:
- Color your icing – Grab your favorite food coloring or another natural form of food coloring and add your loved one’s favorite color to the cake! It will be super easy to mix it in with your whipped frosting.
- Use candy – Placing M&Ms or skittles or even a crushed up candy bar around the cake is a fun way to decorate and make the cake a little more festive. Because who doesn’t love candy and cake?
- Sprinkles sprinkles sprinkles – Get creative with regular or fancy sprinkles. There are so many different kinds you can choose from that I’m sure you’ll be able to find the perfect kind for the occasion.
- Edible flowers – Edible flowers are so beautiful and you can most likely find some at your local craft shop or online. Adds such a beautiful and more formal touch!
