The cutest, and most delicious mini apple crisp! Perfect for a fall night with just the right amount of crisp, and creaminess with a little vanilla ice cream to top it off.
Apples. apples, and more apples!! My fridge is full of them because it’s the fall and who doesn’t love a good apple!?! My personal faves are honey crisp and pink lady. If I can’t find these I will resort to a good ole gala apple too, or even granny smith! But what is even better than just a crisp apple is a warm apple CRISP with vanilla ice cream on top, I used vanilla Breyer’s Delights!
Anything with ice cream is 10x better in my opinion, ~ ~ a la mode IT UP!
Here is what you need for this recipe:
- pancake mix, I used Kodiak Cakes
- Light butter
- lower calorie sugar (or regular if preferred) I used Swerve
- non-fat Greek yogurt
- Quick oats or whole rolled oats
- an apple
- ICE CREAM
- mini baking tin (optional)
- cinnamon
You first make the cake layer (it is a thin layer) using greek yogurt, the pancake mix, and melted light butter, sprinkling the top with some swerve sweetener. Then you bake this for about 10 minutes.
While this bakes I recommend chopping up the apple and mixing it with cinnamon and some of the sugar and allowing it to all combine and sit for a little before baking it. You can also put together the crumb topping which is the oats, more melted butter, cinnamon and sugar.
When the cake layer is done you can top it with the chopped apples and crumb topping. Now it is time to bake it some more for 25-30 minutes! Once it is complete top it with some vanilla ice cream and enjoy enjoy enjoy!!

- Mini loaf tin (optional)
Ingredients
Cake Layer
- 8 grams light butter
- 20 grams Kodiak Cake Protein Buttermilk Mix
- 28 grams non-fat Greek yogurt
Apple Filling
- 1 apple mine was 108 grams
- cinnamon to taste
- Swerve sweetener to taste
Crumb Topping
- 20 grams quick oats
- 10 grams Light butter
- cinnamon to taste
- Swerve sweetener to taste
Ice Cream
- 100 grams Breyer's Delights Vanilla optional
Instructions
- Preheat your oven to 350 degrees and grease a mini loaf tin.
Cake Layer
- Mix together the melted butter and greek yogurt first. Then add the pancake mix and combine. Once it is all combined use a rubber spatula to add it into the tin. Sprinkle to top with some swerve sugar.
- Bake for 10 minutes.
Apple Filling
- Chop up your apple into small pieces.
- In a bowl combine the apple pieces, cinnamon, and sugar. Let sit.
Crumb Topping
- Combine the melted butter, oats, cinnamon and sugar.
- Once the cake layer is done baking add the apple filling and crumb topping.
- Let bake for 25-30 minutes.
- Serve alone or top it with ice cream!!
