Ingredients
  

Cake Layer
  • 8 grams light butter
  • 20 grams Kodiak Cake Protein Buttermilk Mix
  • 28 grams non-fat Greek yogurt
Apple Filling
  • 1 apple mine was 108 grams
  • cinnamon to taste
  • Swerve sweetener to taste
Crumb Topping
  • 20 grams quick oats
  • 10 grams Light butter
  • cinnamon to taste
  • Swerve sweetener to taste
Ice Cream
  • 100 grams Breyer's Delights Vanilla optional

Equipment

  • Mini loaf tin (optional)

Method
 

  1. Preheat your oven to 350 degrees and grease a mini loaf tin.
Cake Layer
  1. Mix together the melted butter and greek yogurt first. Then add the pancake mix and combine. Once it is all combined use a rubber spatula to add it into the tin. Sprinkle to top with some swerve sugar.
  2. Bake for 10 minutes.
Apple Filling
  1. Chop up your apple into small pieces.
  2. In a bowl combine the apple pieces, cinnamon, and sugar. Let sit.
Crumb Topping
  1. Combine the melted butter, oats, cinnamon and sugar.
  2. Once the cake layer is done baking add the apple filling and crumb topping.
  3. Let bake for 25-30 minutes.
  4. Serve alone or top it with ice cream!!
