Broccoli Cheddar Bake

A delicious classic! This broccoli cheddar bake recipe is high in protein, cheesy, and topped with buttery crackers! 

As a child, I truly loved a yummy cheese broccoli casserole. If you do not know what I am talking about, this casserole consisted of cream of mushroom soup, broccoli, cheese and crushed crackers on top. Consider this recipe a healthier, higher protein, version!

Amidst the grocery shopping madness I purchased a huge bag of broccoli from Costco. So, I decided I needed to come up with a recipe that would allow me to put all of this broccoli to use before it went bad! 

To keep this recipe lower in calories, sodium, and higher in protein I altered the classic recipe to come up with something a bit different! 

Here is what you will need for this broccoli cheddar bake:

As you can see not many ingredients are needed for this recipe! To be honest with you, most of them I purchased from Costco! I have been lucky enough to find lean ground turkey in the grocer stores but if you cannot, any ground turkey or chicken will do!

Instructions for this broccoli cheddar bake:

  1. Preheat your oven to 350 degrees and line a 9×13 pan with cooking spray
  2. In a large pot steam your broccoli until it is tender.
  3. While the broccoli is cooking, prepare the ground turkey until it is fully cooked.
  4. When the broccoli is done, drain the water.
  5. Place the pot of broccoli on low heat and add in the cottage cheese, and laughing cow wedges.
  6. Stir, and allow the cheeses to melt.
  7. Now add in the ground turkey and stir.
  8. Using a rubber spatula spoon the mixture into the pan.
  9. Top with crushed saltine crackers and cheddar cheese shreds.
  10. Cover with foil and bake for 30 minutes.

As always, I prepared this dish for a meal prep for the week and added more saltine crackers on the side! You can do the same or have it on it’s own and enjoy it with your family!

Ingredients
  

  • 40 grams Fat Free Cheddar Cheese
  • 400 grams Broccoli weighed raw
  • 16 grams Crushes saltine crackers
  • 300 grams 2% Fat Cottage Cheese
  • 3 Light Laughing Cow Swiss Cheese Wedges
  • 559 grams Extra Lean Ground Turkey 1 package

Instructions
