Birthday Cake Cinnamon Rolls (No Yeast)

These birthday cake cinnamon rolls are one of my favorite recipes to date! They require no yeast, no resting time, and they are only 85 calories each.

Can you agree that anything birthday cake and cinnamon roll flavored never tastes bad? I hope so. So when I decided to make these I knew that they were going to be delicious! Now I know it sounds a little weird, birthday cake and cinnamon all in one, but these birthday cake cinnamon rolls are made without any cinnamon. Instead of cinnamon, I crushed up Birthday Cake Magic Spoon cereal and rolled it into the buns! If you do not have this cereal, sprinkles will be just as yummy!

Ingredients you need for the birthday cake cinnamon rolls:
  • 2/3 cup fat-free plain Greek yogurt (170 grams)
  • 1 cup Birthday Cake Kodiak Power Pancake Mix (106 grams)
  • 3/4 tsp baking powder
  • 1/8 tsp salt
  • 2 tbsp Truvia brown sugar
  • 2 tbsp crushed Magic Spoon Cereal (5 grams – optional)
  • Sprinkles for topping (optional)
Glaze:
  • 2 tbsp Swerve confectioners sugar
  • 1 tbsp fat-free plain Greek yogurt
  • 1 tsp vanilla extract

Instructions:
  1. Preheat your oven to 350 degrees and grease a small rectangle baking dish (5inx7in)
  2. In a medium mixing bowl combine the Greek yogurt, pancake mix, baking powder, and salt with a fork, this will be sticky like a pizza dough
  3. Sprinkle a clean surface with more of the pancake mix and gently knead the dough (4 or 5 turns)
  4. Use a rolling pin to roll out the dough into a rectangle, about 1/2 inch thick
  5. Sprinkle with brown sugar and crushed cereal
  6. Cut into 6 circles and line into the baking dish (they can be touching)
  7. Bake at 350 for 20 minutes
  8. While the cinnamon rolls are baking, prepare the glaze by combining all of the glaze ingredients
  9. Pour over warm cinnamon rolls and top with sprinkles
  10. Serve warm

How do you know when a cinnamon roll is done?

The cinnamon rolls need to rise and they should all be touching! After 20 minutes check that they are browned on the top, if they are not they need more baking time.
