Lemon Bars

It’s a beautiful day for some lemon bars! Perfect tangy and sweet lemon bars with a buttery, crumbly crust.

A perfect summer recipe for the whole family. I enjoy making these on holidays for everyone to enjoy! Don’t forget to top them off with some powdered sugar. You can enjoy them on their own or with some delicious ice cream to cool off on a hot summer day.

The good thing about them is they are only about 101 calories per square! If you weigh out the entire recipe like I did you can just enter this into MyFitnessPal as the number of servings and then you can weigh each bar and enter that as the individual serving when you log it for the day.

What You Will Need For The Lemon Bars:
  • unsweetened apple sauce
  • light butter
  • all purpose flour
  • corn starch
  • powdered sugar
  • lemon zest
  • eggs
  • lemon juice
Here Is How You Make The Lemon Bars:
  1. Line a 8×8 pan with parchment paper and preheat the oven to 350.
  2. Combine the ingredients for the crust. Use a fork to combine it. Once it’s combined place it in the pan and spread it so it lines the bottom.
  3. Bake the crust for 20 minutes.
  4. While the crust is baking combine all of the ingredients for the filling.
  5. Once the crust is complete add the filling and bake for another 20-25 minutes.
  6. Let it cool for 1 hour and refrigerate for another 2 hours.
  7. Sprinkle with more powdered sugar and serve!

  • 42 grams applesauce (unsweetened) 2 tbs
  • 56 grams light butter 4 tbs
  • 120 grams white all purpose flour 1 cup
  • 16 grams corn starch 2 tbs
  • 30 grams powdered sugar 1/4 cup
  • 1 tbsp lemon zest

Filling

  • 3 eggs
  • 120 grams powdered sugar 1 cup
  • 1/3 cup lemon juice from 2 lemons
  • 15 grams white all purpose flour

Instructions
