Honey Cilantro Chicken

Honey cilantro chicken is one of the best crockpot chicken recipes ever! You can add it into a crunch wrap with cut da carb, you can add it to your rice bowls, I love creating greek style bowls and adding pickled onions, and feta cheese … or even to a quesadilla with some cheese. Ok now I am hungry!

I have been making this recipe since the very beginning of my macro journey and it never gets old! It is so tender and we all know how much I love my crock pot recipes.

I love this on it’s own but if you are really looking to spice it up, adding it to a pan before serving and crisping it up a bit gives it a flavor like no other! It is so good.

What You Need For The Honey Cilantro Chicken:
  • 2.3 lbs chicken breast
  • 2 tsp minced garlic
  • 2 tbsp honey (30 grams)
  • 1 cup salsa verde (220 mL)
  • 1 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp paprika

How To Make The Honey Cilantro Chicken:
  • Add all ingredients to a crockpot
  • Make sure that the chicken is covered with the salsa
  • Cook on low for 4-6 hours
  • Shred chicken with two forks
  • Serve and enjoy!
What To Serve With:

Burrito Bowl: Serve over white rice with avocado, pico de gallo, shredded cheese, sour cream, and cilantro!

Quesadilla: add to flour tortillas, cheddar cheese and warm until melty!

Greek Bowl: Serve brown rice, pickled onions, feta cheese, tzatziki, and kale!

Crunch wrap: Add it into your cut da carb wrap with pickled jalapenos and cheddar cheese!

Ingredients

  • 2.3 lbs chicken breast
  • 2 tsp minced garlic
  • 2 tbsp honey 30 grams
  • 1 cup salsa verde 220 mL
  • 1 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 cup fresh cilantro

Instructions

  1. Add all ingredients to a crockpot
  2. Make sure that the chicken is covered with the salsa
  3. Cook on low for 4-6 hours
  4. Finely chop the fresh cilantro
  5. When the chicken is done cooking, remove from the crock pot and place into a large bowl. Use two forks to shred the chicken, this will be very easy!! The chicken should basically just fall apart
  6. Add chopped cilantro to the chicken and combine
  7. Serve and enjoy!
