What’s the fall season without pumpkin munchkins from Dunkin Donuts. Next to the chocolate munchkins, they are easily my favorite.
As much as I would love to eat Dunkin’ munchkins everyday it probably isn’t the best for you right?! I mean they are only 70 calories a piece but without the tempting coffee we may be better off making these ourselves.
So I wanted to come up with an easy way to make these munchkins with limited ingredients and with an air fryer.. no deep fryer needed. Each munchkin is only 54 calories and almost three grams of protein!
Now don’t get me wrong I love a good cinnamon sugar donut, but glazed is where it is really at, especially with munchkins.
These little donut holes are 54 calories each and coated in a nice shiny glaze.
So let’s get into the ingredients needed for the easy pumpkin munchkins.
Pumpkin Purée: You won’t have a hard time finding this this time of year… or maybe you will because everyone is baking with it. Either way I’m sure you will be able to find it just make sure it isn’t the pumpkin pie filling, just the plain purée!
Kodiak Cake Pumpkin Flax Mix: My sister blessed me with this mix for one of my birthday gifts.. Everyone knows I love pumpkin spice everything and make it into a pancake mix. I’m there! You can find this at Target and use the leftover mix to make yourself some pancakes.
Swerve Brown Sugar: This is optional, the recipe does not require much but I highly recommend it! If you use regular brown sugar, the macros will vary!
Confectioners sugar for coating: As I said, there is nothing better than a glazed donut, especially a pumpkin one!!
Plain Greek Yogurt: Mix this with some water and add in the confectioners sugar to make the donut glaze!
A sprinkle of salt and baking powder.
That is all you need!!
How do you make pumpkin munchkins?
These pumpkin munchkins are so easy to make and you really do not need many ingredients as listed above!
- To make these combine the kodiak pumpkin flax mix with the pumpkin puree, it will be a dough like substance.. Sort of like pizza dough!
- Add in 1 tablespoon of Swerve Brown Sugar and combine well
- Line your air fryer with tin foil and spray with cooking spray
- Take the dough and create 1 inch balls, you should have about 7
- Place them in the air fryer, and air fry for 5 minutes at 370 degrees.
- While the munchkins are baking, make the glaze by combining the plain greek yogurt with the confectioners sugar and the tiniest bit of water, about 2 splashes.
- When the munchkins are done, let them cool for a few minutes
- Place the munchkins in the glaze and coat them fully, allow them to try on a drying rack.
- You may have some glaze left over, you can drizzle it on top or toss it!
- Enjoy.

Ingredients
- 1/2 cup (tightly packed) Pumpkin Flax Kodiak Cake Power Mix (80 grams)
- 1/4 cup Pumpkin Puree (70 grams)
- 1 tbsp Swerve Brown Sugar
- 1/2 tsp baking powder
- sprinkle of salt
Glaze
- 2 tbsp Confectioners Sugar (15 grams)
- 1 tbsp Fage Fat Free Greek Yogurt (20 grams)
