Easy Chicken Meatballs

High in protein and filled with flavor, these chicken meatballs, cooked in delicious red marinara sauce are the perfect meal prep for the week! Paired with angel hair pasta and parmesan cheese makes them even better!

I can eat sgetti and meatballs everyday of my life… as a kid pasta with cheese was my favorite meal, my school journals even proved it!!

Meatballs are so versatile, I typically will opt to use ground turkey or ground beef but this time around I wanted to try and use ground chicken! I used essentially the same ingredients I would use for a ground beef or ground turkey recipe (this is how my mom has always made them)

Here is what you will need for this chicken meatball recipe:
  • Lean ground chicken
  • Unflavored bread crumbs 
  • Parmesan cheese
  • Whole egg
  • Dried minced onion, dried oregano, garlic powder, dried basil
  • Marinara sauce (I used homemade sauce)
Here is how you make the chicken meatballs:
  1. In a large bowl combine all of the ingredients except for the marinara sauce!
  2. Use your hands to combine the mixture and form into one inch balls
  3. Spray a large sauce pan with cooking spray and place the meatballs on the pan
  4. Cook over medium heat and brown both sides (they will not be fully cooked)
  5. Add the marinara sauce, bring to a boil, cover and reduce.
  6. Cook on low for 20 to 30 minutes
  7. Serve and enjoy

That is all! My favorite way to enjoy these is with angel hair pasta, some sort of veggie and lots of parmesan cheese! I make this at the beginning of the week and will have them for lunch or dinner for the whole week!! This recipe makes 6 servings!

  • 1 package Lean ground chicken 457 grams
  • 30 grams Unflavored bread crumbs
  • 20 grams Parmesan cheese
  • 1 Whole egg
  • 656 grams Marinara sauce I used homemade sauce
  • 1 tsp Dried minced onion
  • 1 tbsp Dried oregano
  • 1 tsp Garlic powder
  • 1 tsp Dried basil

Instructions
