I had leftover canned biscuits and wanted to come up with an original idea that I had never made before. So I searched around on Pinterest and finally decided on little chicken melts. I could have made another bubble up, but I wanted to make something different.
I like to have these on the side of a big salad! I typically enjoy 1-2 in a meal. They are high in protein as well, each melt has 18 grams of protein!

Creamy Chicken Taco Melts Ingredients:
Chicken Breast: I recommend cooking and shredding this ahead of time
Fat Free Greek Yogurt and more on the side for dipping: Fat free greek yogurt is a great addition, it adds a creaminess to this recipe but also adds more protein! It is also great on the side for dipping. If you do not want to use this, you can use fat free or light sour cream
Salsa: I personally like the Tostitos brand.. Don’t ask me why but it is my favorite. But any brand will work but I recommend a red salsa!
Canned biscuits: I used the biscuits from Aldi, but Pillsbury are also perfect to use, they are about 170 calories per biscuit, 1 biscuit makes one taco melt.
Taco spices: Cumin, chili powder, paprika: I like to make my own taco seasoning, the premade taco seasoning has added sugar to it which I find unnecessary.
How to make the creamy chicken taco melts:
- Preheat oven to 375 F
- In a large bowl combine greek yogurt, chicken breast, spices, and salsa
- Microwave and stir every 30 seconds for a total of 60-90 seconds
- Line a baking sheet with parchment paper and spray with cooking spray
- Take each biscuit and flatten them with a mini rolling pin into 6-inch discs. Be careful that they do not stick to the counter.
- Spoon 1-2 tbsp of the chicken mixture and sprinkle with about 1 tbsp of cheese
- Fold the dough in half and press with a fork to seal, make sure there are no openings
- Place on the baking sheet and bake for 10-12 minutes or until golden brown
- Serve with more plain greek yogurt on the side for dipping. You can also use light sour cream
