Preheat your oven to 350 degrees and line or grease 12 cupcake tins
Using a large kitchen mixer combine the wet ingredients: egg, egg whites, applesauce, cake batter extract
In a separate bowl combine the oat flour, vanilla protein powder, baking soda, baking powder
Add these dry ingredients into the wet and mix
When everything is combined use a spoon to take out ⅓ of the mixture and place it into a separate bowl.
Add the cocoa powder and the chocolate pudding powder into the ⅔ mixture and combine
Add the vanilla pudding powder into the ⅓ mixture and combine
Separate the chocolate batter into the 12 cupcake tins
Dollop the vanilla mixture onto the top of the 12 chocolate cupcakes
Using a toothpick swirl the vanilla into the chocolate and make some pretty art!!
Bake for 10 minutes
Let the cupcakes cool
Use the same swirl technique with the frosting, you can do a layer of vanilla and a chocolate swirl OR a layer of chocolate and a vanilla swirl, whichever you prefer. I use 10 grams of one and 3 grams for the swirl.
