Ingredients
  

Cake Layer

  • 8 grams light butter
  • 20 grams Kodiak Cake Protein Buttermilk Mix
  • 28 grams non-fat Greek yogurt

Apple Filling

  • 1 apple mine was 108 grams
  • cinnamon to taste
  • Swerve sweetener to taste

Crumb Topping

  • 20 grams quick oats
  • 10 grams Light butter
  • cinnamon to taste
  • Swerve sweetener to taste

Ice Cream

  • 100 grams Breyer's Delights Vanilla optional

Instructions
 

  • Preheat your oven to 350 degrees and grease a mini loaf tin.

Cake Layer

  • Mix together the melted butter and greek yogurt first. Then add the pancake mix and combine. Once it is all combined use a rubber spatula to add it into the tin. Sprinkle to top with some swerve sugar.
  • Bake for 10 minutes.

Apple Filling

  • Chop up your apple into small pieces.
  • In a bowl combine the apple pieces, cinnamon, and sugar. Let sit.

Crumb Topping

  • Combine the melted butter, oats, cinnamon and sugar.
  • Once the cake layer is done baking add the apple filling and crumb topping.
  • Let bake for 25-30 minutes.
  • Serve alone or top it with ice cream!!
