Ingredients
  

Crust

  • 42 grams applesauce (unsweetened) 2 tbs
  • 56 grams light butter 4 tbs
  • 120 grams white all purpose flour 1 cup
  • 16 grams corn starch 2 tbs
  • 30 grams powdered sugar 1/4 cup
  • 1 tbsp lemon zest

Filling

  • 3 eggs
  • 120 grams powdered sugar 1 cup
  • 1/3 cup lemon juice from 2 lemons
  • 15 grams white all purpose flour

Instructions
 

  • Line a 8x8 pan with parchment paper and preheat the oven to 350.
  • Combine the ingredients for the crust. Use a fork to combine it. Once it’s combined place it in the pan and spread it so it lines the bottom.
  • Bake the crust for 20 minutes
  • While the crust is baking combine all of the ingredients for the filling
  • Once the crust is complete add the filling and bake for another 20-25 minutes.
  • Let it cool for 1 hour and refrigerate for another 2 hours.
  • Sprinkle with more powdered sugar and serve!!
