Using a KitchenAid mixer or hand whisk, combine the egg and the butter
Now add in the remaining wet ingredients: brown sugar, vanilla extract, carrots, baking soda, baking powder, and salt
In a separate bowl combine the dry ingredients: oat flour, nutmeg, cinnamon, and old fashioned oats.
Add the dry ingredients into the wet ingredients and combine
Chill the cookie dough in the refrigerator for 30-60 minutes
Preheat your oven to 350 degrees.
Once the cookie dough is chilled, scoop the cookies into balls on a cookie sheet and slightly flatten them
Bake the cookies for 8-10 minutes!
This recipe makes 12-15 cookies!
Once the cookies are cool, take two cookies, spread 10-12 grams of frosting on the bottom of one cookie and top it with the other to create a cute sandwich! Do this with the remaining cookies!
