Carrot Cake Sandwich Cookies

Ingredients
  

  • 60 grams Shredded or food processed carrots
  • 60 grams Oat flour
  • 42 grams Light Butter
  • 30 grams Old Fashioned Oats
  • 30 grams Swerve Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/8 tsp Salt
  • 1 whole egg

Filling

  • 10 grams Pillsbury Creamy Supreme Vanilla Frosting

Instructions
 

  • Using a KitchenAid mixer or hand whisk, combine the egg and the butter
  • Now add in the remaining wet ingredients: brown sugar, vanilla extract, carrots, baking soda, baking powder, and salt
  • In a separate bowl combine the dry ingredients: oat flour, nutmeg, cinnamon, and old fashioned oats.
  • Add the dry ingredients into the wet ingredients and combine
  • Chill the cookie dough in the refrigerator for 30-60 minutes
  • Preheat your oven to 350 degrees.
  • Once the cookie dough is chilled, scoop the cookies into balls on a cookie sheet and slightly flatten them
  • Bake the cookies for 8-10 minutes!
  • This recipe makes 12-15 cookies!
  • Once the cookies are cool, take two cookies, spread 10-12 grams of frosting on the bottom of one cookie and top it with the other to create a cute sandwich! Do this with the remaining cookies!
