Spicy Turkey Stew

This spicy turkey stew is extremely high in volume, you will not believe the amount of stew you get per serving! Yet, this recipe is still low in calories, and high in protein! Have a look for yourself.

I have been playing with various recipes adding in the veggies that I have in my refrigerator. I tend to always have a squash of some sort. ALSO, I hit the jackpot at Costco when I found HUGE bags of frozen Organic riced cauliflower and Organic frozen butternut squash. I love cooking with squash and cauliflower rice because it adds loads of volume. To explain… this recipe makes 6 servings and each serving is 455 grams!!! OMG. And how many calories do you ask? 215 calories, 22 grams of protein, ONLY 32 carbs and 2 grams of fat! It is seriously magical people.

I tend to top these bowls with melted fat free cheddar cheese, lettuce shreds, and make my own chips to dip in my air fryer. I will use Xtreme Wellness Wraps or Extra Thin Corn Tortillas.

Ingredients for spicy turkey stew:
  • 1 zucchini
  • 1 bag of frozen rice cauliflower
  • 1 bag of frozen butternut squash
  • 1 onion
  • 2 cups of chicken broth
  • 1 tsp crushed garlic OR 1 clove
  • 2 large carrots peeled and chopped
  • 2 stalks of celery
  • 8 tablespoons of Mild chunky salsa
  • 1 can of corn
  • 2 small potatoes
  • 1 package of extra lean ground turkey
  • cracked pepper, cumin, and red chili powder
  • Franks Hot Sauce *optional to taste

What is great about all of these recipes is that you can just chop everything up and throw things in the pot on the stove! You can also use a slow cooker. The best tactic to follow for these is to put the harder vegetables in first and bring to a boil and then add in the frozen and canned vegetables towards the end. This way all the veggies will be cooked PERFECTLY!

If you do not have all of these veggies you can substitute! Trust me a lot will work! I also sometimes will add fat free cream cheese to make a creamy base like my Creamy Cauliflower Chili!

Ingredients

  • 1 zucchini 130 grams
  • 1 bag of frozen rice cauliflower 471 grams
  • 1 bag of frozen butternut squash 458 grams
  • 1 onion 235 grams
  • 2 cups of chicken broth or 12 grams of Better Than Bouillon and 2 cups of water
  • 1 tsp crushed garlic OR 1 clove
  • 2 large carrots peeled and chopped 114 grams
  • 2 stalks of celery
  • 8 tablespoons of Mild chunky salsa
  • 1 can of corn
  • 2 small potatoes 138 grams
  • 1 package of extra lean ground turkey 430 grams raw

Spices

  • 1 1/2 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp cracked pepper
  • Franks hot sauce optional** to taste

Instructions

  1. Cook your ground turkey in a greased pot. I just spray the bottom with cooking spray.
  2. While the turkey is cooking chop you onions, carrots, celery, and potatoes.
  3. When the turkey is done cooking, add the chicken broth, onions, carrots, celery and potatoes.
  4. Bring to a boil and reduce heat and cover and cook for 20 minutes.
  5. Now you can add the crushed garlic, salsa, spices, zucchini, butternut squash, and riced cauliflower and corn!
  6. Let simmer for 20-30 more minutes ** if you use a crock pot add the veggies in the same order, just add the second round when there is 20 minutes left to the crock pot cooking time.
  7. Divide and serve!!!
