Easy Classic Meatloaf

The best meatloaf ever! This easy and classic meatloaf is my mom’s recipe that I have loved ever since I was young. The tomato soup tops off this nostalgic recipe and I feel like I am a kid again!

This recipe is quite simple, and luckily for me, I only had to buy one item when I decided to make this for the week! The other benefit to this recipe, is that it is perfect for meal prep. This classic meatloaf is high in protein so I like to pair it with some pasta and vegetables!

Specifically, I pair this dish with egg noodles, or angel hair pasta, more tomato sauce, some parmesan cheese, and lima beans! Realistically, meatloaf is like a big meatball right? So what better than to pair it with some yummy pasta!

Here Are The Ingredients For This Easy Classic Meatloaf:
  • Lean ground beef, I used 95/5
  • Bread crumbs (unseasoned)
  • 1 whole egg
  • Tomato soup or any red sauce
  • Parmesan cheese
  • Dried onion or finely chopped raw onion
  • Garlic powder, dried parsley, salt, and pepper

As I said, there is not much to it! Once you have all of these ingredients you can begin assembling the meatloaf. I find it easiest to combine everything into a bowl and to use my hands to mix everything together!

Instructions For Making My Easy Classic Meatloaf:
  1. Preheat your oven to 350 degrees
  2. If you are using raw onion, finely chop about 1/4 of the onion
  3. In a large bowl combine the beef, bread crumbs, whole egg, parmesan cheese, onion, and spices
  4. Using your hands, combine everything together
  5. Shape the meatloaf into a small rounded loaf
  6. In a baking dish, spoon some of the tomato soup onto the bottom of the dish, place the meatloaf on top, and spoon more tomato soup on top
  7. Cover and bake for 40 minutes
  8. While the meatloaf is baking you can prepare your sides
  9. After the meatloaf is finished cooking take out and let cool!
  10. Slice and portion the meatloaf, top with more sauce, prep for the week or enjoy right then and there!

  • 1 whole egg
  • 100 mL Tomato soup or any red sauce
  • 10 grams Parmesan cheese
  • 40 grams Finely chopped raw onion or 1-2 tablespoon dried onion
  • Garlic powder
  • dried parsley
  • salt and pepper
